St. Patrick’s Day is right around the corner, and if you’re looking for fun treat to help celebrate St. Patrick’s Day or to liven up dessert time around your house, these rainbow cupcakes might be the way to go. These cupcakes might look a little tricky to make, but they are actually quite easy.
Simply prepare standard box of cake mix {or use your own recipe} and divide your cake mix batter between 6 bowls and then add food coloring.
Line your cupcake tins {I use these brown liners} and carefully layer them with red, orange, yellow, green, blue and purple batter.
Bake for 18 minutes at 350°. Cool on a wire rack.
Frost with vanilla icing and add a chocolate gold coin to the top.

I know someone who just did this with a 6 layer cake for her daughter’s 9th birthday. Six thin layers, wound up the height of a normal 3 layer. It’s just awesome!

I made these cupcakes for my daughter’s rainbow themed 3 1/2 birthday. HUGE hit! Have you ever tried making Alton Brown’s avocado buttercream frosting? Substitute avocados for butter. The green frosting would be a perfect fit for St Patricks Day.
Btw my girlfriend and I are obsessed and at times live vicariously through your garden since we can only do so much while in nursing school and living in Eastern (freezing cold) Washington. Our texts “Did you see what Mavis did??”
Mavis says
Ha! Eastern Washington IS cold! When do you start planting over there?

Wow, what a clever idea, Mavis. My twin grandkids’ 12th birthday is coming up next month. I’ll bring these cupcakes to their party as a celebration bonus.

about how much do you put of each colored batter in each cup? Just curious as I am thinking of doing this for my bible study group. Thanks!
Mavis says
A little more than a teaspoon. You kind of have to eye ball it. 🙂
Bridget P says
Ok Thanks! 🙂
