This recipe for meatloaf with American cheese comes from my neighbor The Church Lady, who actually got the recipe from her friends Kelli and Erik several years ago. 🙂 Ya gotta love a recipe that has been passed around from friend to friend, right?
At first I though it was a little weird to be adding American cheese to a meatloaf recipe, but let me tell you Bob, it is freakin’ fantastic! The American cheese melts and you don’t even know it’s there and the flavor is great.
Although this recipe is for just one meatloaf, we whipped up 20 pans of the stuff at our last freezer meal party because The Church Lady wouldn’t stop raving about it… and I’m so glad we did.
Ingredients for the Meatloaf
1 1/2 lbs ground beef
1 Eggs, beaten
1/2 cup Italian bread crumbs
1 cup tomato sauce
1/2 cup onions, chopped
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon thyme
2 slices American cheese
Ingredients for the Meatloaf Glaze
1/4 cup ketchup
1 teaspoon dry mustard
1/4 teaspoon nutmeg
3 tablespoons brown sugar
Directions
Place all the ingredients, except the cheese in a large bowl and mix well. Place half of the meat mixture in the center of a 9″ by 12″ pan and shape into a nice mound. Place 2 slices of American cheese in the center of the mound. Add remaining meat on top of the cheese and then pinch the edges of the meat together so no cheese is showing. Set aside.
To make the meatloaf glaze mix all the ingredients for the meatloaf glaze together in a small bowl and pour over the top of the meatloaf.
Bake at 350 degrees for 1 hour and 10 minutes. Or cover with foil and pop it in the freezer for later.
