We were so busy working outside in the yard last week, it seemed like all our meals were of the quick, let me just stuff something in my mouth so I can get back out there variety.
I love this time of year. I actually enjoy waking up with sore muscles and the sun beaming in the windows at 4:30 am telling me it’s time to get up and get going.
I like being outside, playing in the dirt and working in a warm environment {well if you call 65 degrees warm, which I do. I live in Maine after all}. π
There is something so fulfilling about it, and I am so glad to be exactly where I am at this stage in my life.
And while I miss having the use of an oven, spending less time in the kitchen and existing on quick meals, does have its perks.
Summer! It’s finally here and I intend to get the most out of it this year.

Waffles with last summer’s blueberries pulled from the freezer.
A tuna sandwich and dill pickles. Who doesn’t like a nice dill pickle spear?
Weenies! {Note: yellow mustard is gross. Those aren’t mine. I like mine with ketchup and relish.}
Beans and rice, rice and beans {I wonder if you can grow avocados in a greenhouse in Maine?}.
The most disgusting alfredo sauce from a jar on the planet earth. But hey, the little broccoli trees were our first real harvest from the garden this year {we’ve also harvested chives, but I’m not counting those}.
Pickety bits. Quick and satisfying.
Ice cream for dinner. π Yipee. I mean really, it has milk and eggs so it’s practically like eating a frittata, right?

The sea salt ones taste just like my favorite pita crackers from ADLI. Hopefully this will be enough to get us through the summer.
Our date day this past week included a stop at Five Guys. I love their strawberry shakes.
But the best thing I ate all week was a doughnut from the General Store. π

Money has been extremely tight this past week, so many of our meals are closer to your pickety bits. Chunks of Swiss rolled up in a slice of deli style ham, Pb pretzels, walnuts and cheese, and tuna salad with cucumber have been among the highlights. If nothing else, we can’t gain anything from the amounts We are eating. I would like to know if anyone has discovered a good jarred Alfredo sauce? It would be good to have on hand.

I tried the sprouts brand Alfredo sauce. But I added several spoonfuls of pesto to it. But it was edible and quick.

If the jar of Alfredo sauce is bland, you can add some heavy cream and parmesan cheese. Note: Alfredo sauce is made from butter, heavy cream, and parmesan cheese. You can also add garlic, salt, pepper, and Italian seasoning to spice it up.

Struggling with meals cuz nothing tastes, or sounds, good. i’d be happy with a bowl of cereal every night…alas…i need to feed my hard working HH :-). So…BLT’s are a summer favorite (also thrown on is a fried egg and cheese); a sheet pan meal with broccoli, sweet potatoes, and chicken thighs; Grilled burgers with potato salad (your recipe is our all time favorite!); and a “fend for yourself meal” – for me it was a bowl of cereal! HeHeHe!

Each week I typically make a couple of casseroles of some kind, each loaded with vegetables, and we pick one to have with a big salad each night. Saves my sanity after working all day.

Right now we are starting our dinner of Zoodles and homemade spaghetti sauce because we have zucchini coming out of our ears. Also baked two more chocolate zucchini breads this morning and gave half of one to our 3 year old neighbor who ate it in his treehouse. Ah, summer!

No warmer weather here in the PNW – Almost 3″ of rain since Friday morning and it’s 55Β°. I’ve been craving hot, gooey lasagna and warm, bubbling stew. I did run out during a break in the rain this afternoon and harvest my first head of butter lettuce.

Sometimes you can save a sender in your contacts to make things not land in junk? Find one of the emails and save the sender as a contact within your email system. (or Mavis may figure out a fix on her side)

We are getting ready for a cross country move so most of our food is quick and easy. Sorting thru and packing 18 yrs worth of stuff is a pain. I did make a big casserole the other night knowing it would leave lots of yummy leftovers. Tonight we are having stir fry which will include the first of the snow peas, onion and cauliflower from the garden. Itβs the only veggies I got planted before we found out the move was going to happen.

Not yet! We are still using up the maple syrup we bought from a farm last spring. Hopefully this fall we’ll be able to tap into our supply. π
