It was another good week in the food department here at Camp Butterfield. We harvested tomatoes, peppers, chives, cabbage, potatoes, and winter squash from the garden and only made one trip to the grocery store.
We also dehydrated a bunch of peppers, tomatoes and potatoes this past week as well. {I’ll share more about our efforts to dehydrate our extra produce soon}.
Hannaford $18.43
Hannaford had whole chickens on this last week for $0.99 a pound and well, that’s a stock up price for me. Although our freezers are nearly full, I did want to add a few more to the deep freeze for this winter.
As far as meat goes, we’re set until at least the end of the year {if not longer}.
Because there’s been so much food coming from the garden this summer, we haven’t been eating much meat lately. It also helps that we have a boatload of rice and beans in the pantry as well.
Beans, a little seasoning, fresh tomatoes, onions and chives. Mmm Mmm good.
It’s even better with a fried egg on top.
Panera copy cat soup. I could seriously eat this everyday, it’s that good.
Butternut squash in the air fryer… Not so much. I think I’ll wait until our oven is installed next month and cook the rest of our squash in the oven instead.
Spaghetti cooked outside on the camp stove. Yee-Haw! I made sure to make a big batch. 🙂 Cooking isn’t exactly my favorite thing to do right now as I’m sure you can tell by all the food repeats over the past few months.
To say I’m excited about having an oven in the house again would be a HUGE understatement.

And last but not least, steamed potatoes tossed with butter, salt and chives.
Keeping it simple. That’s what I’m all about these days.
But soon… Soon there will be cakes and pies and casseroles and hot crusty loaves of bread fresh from the oven. It’s going to be glorious. And I have a feeling I’ll be camped out in my new kitchen all winter long.

Preserving the garden harvest has been a big part of my life lately. I did make vegetarian pies/pasties for the freezer last week on a big baking day along with several apple pies. Lots of dehydrating and canning — applesauce, sliced apples, apple juice, dill pickle chunks, giarderia, zucchini pickles, dehydrated celery leaves, lemon balm, oregano, basil… it feels like its never ending but when that first frost hits, a lot of it will end.

I tried out the air fryer setting on our new oven for Brussels sprouts and was very pleasantly surprised. We have a countertop air fryer that has multiple racks, but it just doesn’t hold much or cook properly when full. Super exciting that I might be able to get the same effect in the regular oven so that I can potentially ditch the countertop one.
I also made pumpkin oatmeal bars, which were amazing, and I tried out a new casserole recipe. I have a friend coming Saturday to hold the baby while I make apple butter, so I might try to freeze some pies then as well.

Your meals look great and inspire me. I made a couple of Rancho Gordo bean recipes for chili because I received my first Bean Club member box. I made the chili sin carne (no meat or tomatoes) and the chili con carne (includes meat but no tomatoes). Both are really good but for me the chili sin carne is the winner by a bit because I love the fresh corn and zucchini in it. Last night I had my husband grill chicken breasts that I marinated in our favorite marinade (soy sauce, pineapple juice, and cooking sherry) and we had chicken salad with romaine, tomatoes, cucumbers, homemade maple balsamic dressing and delicious pumpkin spiced pumpkin seeds I found at TRADER Joes..OMG the homemade dressing and pumpkin seeds made the salad!
This week it’s time to make some bread because the weather has finally cooled down enough that I’m not concerned about heating up my house- yay! I’m also going to make another recipe from the Rancho Gordo newsletter…cranberry beans with radicchio and pecorino…I think this salad with a bit of homemade bread is a meal…we’ll see if the husband agrees with me…

I started making the chow chow recipe to can yesterday (you have to salt the veggies and let them sit overnight) and I will finish it and can the chow chow today. I made a batch of Amish Pasta Salad (recipe on Southern Lady Cooks) and I must say it is fantastic. I know it will star in many lunches this week. I also baked a batch of chocolate chip muffins in the mini muffin pan which my 6 year old thought was ‘the coolest thing ever!’ I roasted a pork shoulder on Friday and we had roast Friday night, Cuban Sandwiches on Saturday, and chili verde on Sunday – hooray for using the whole shoulder up and avoiding boring leftovers!
I also found a new recipe that I will try this week for a Honey Bun cake. The reviews all say it is fabulous but I will be interested to see how it comes out for me as I won’t use the boxed cake mix that it calls for – I have way too much flour to use a cake mix around here 🙂

You are missing out on my favorite treat of summer: fried zucchini! Slice those puppies (little to baseball club-size) and dip in beaten egg, then half-and-half cornmeal and flour. Fry in oil, salt and pepper on each side — and EAT.
I could live on these. Seriously.

My husband and I have been working on expanding our gardens and crops and preserving more food when it’s available, like when our CSA farm has bulk options, etc.
Long story short we have come nowhere near where we want to be BUT there is a light at the end of the tunnel.
This week I stocked up on a few things AND got it processed right away. We went to our CSA for their PYO cherry tomatoes because my 1 & 3 year old will eat a pint in a sitting and ask for more.
But most importantly, I CANNED FOR THE FIRST TIME! Technically I tried to make a batch of pickles a million years ago, but, meh. I learned how to use my pressure canner and I made green beans from our CSA bulk and I made your bruschetta recipe out of about 1/2 the tomatoes we picked. I am so excited and nervous!
Hopefully this week I will pull anything out of the garden that’s done for the season and get some more root veggies and in, just in case!
