It was a fantastic week in the food department.
- Because I didn’t need to go to the store.
- I made 3 big meals, and they all made multiple servings {plus extra for the freezer.} so I didn’t even have to cook that much.
I LOVE it when that happens! 🙂
One of my favorite meals I made was a big pot of bean soup.
Basically, soak about a pound and a half of beans. Drain. Add water to cover the beans by about 2 inches, add a heaping tablespoon of chicken stock base, 1 can of Rotel, put the lid on the pot and pop in the oven for a few hours at 300 degrees.
About an hour before serving, add about 2 cups of frozen vegetables, give it a stir, put the lid back on and pop it back in the oven to cook.
Dinner is served!
Rotel. All the flavor/spices you need in a tiny little can. We love the stuff.
Another night I made Mrs. C’s pot roast.
And then the next night a beef pot pie with a puff pastry topping that took us a few days to eat.
I even made popovers to go a long with it.
Have you made popovers before? They are super easy to make and you don’t even need a special popover pan to make them. Just use an ordinary muffin tin.
There was also split pea soup with leftover ham.
But I think my favorite meal of the week was a fried egg on toast.
Simple food… to fill your belly. What more do you need?

Beef Stew: I freeze the au jus from beef roasts (I cover with water and a cup of brown gravy and slow roast 250 for 4h.) So I got 4c of that out of the freezer, chopped some slices of frozen beef, tossed in a bag of frozen peas/carrots and diced up some purple potatoes. Voila, beef stew, enough for 5 big servings!
Other meals were roasted potatoes, grilled sockeye salmon, grilled burger patties w lots of melty cheddar and whatever veg was in the crisper {memory gone on those).
Yea for no groceries!

HH grabbed a rotisserie yesterday so it will be enchiladas with home canned tomatillo salsa that doubles as sauce. We’ll also be having your green tomato curry. It’s my husbands favorite curry. I blend my sauce pretty smooth and heat up with coconut milk. I know some peeps were concerned in your comments section about the acidity so I checked with my P.H meter and it was fine. Green tomatoes are extremely acidic.
So it’s a green food week with all the leftovers.

Your dinners look great-especially the pot pie! I cooked a ham last week specifically to use in recipes (and to get it out of my freezer). I made bean soup and macaroni and cheese with diced ham in it other than that I didn’t do much cooking because my husband wasn’t home much and I also had a tooth pulled (thought of your “crappy British teeth” comments long ago). I still have ham to use so I’m going to make a quiche and split pea soup and maybe a potato dish with ham in it.

Last night was the one year anniversary of my mom passing, so my son and I did something out of the ordinary – mashed potatoes, brown gravy, green beans and chicken strips. Not our normal fair, but all favorites of my mom. It was really nice. We have left over potatoes and gravy so this week will include a potato leek soup and probably open faced roast beef sandwiches.

Been sick with COVID but managed to cook well: used leftover ham and broccoli for a quiche, ate eggs and sausage, made soup out of leftover mashed potatoes with grilled cheese sandwiches, and a neighbor brought us a chicken pot pie which we ate with the rest of the fresh broccoli. Also found I had a balance on a local delivery service and a balance on a DoorDash card so we can combine those to get a restaurant meal, too. I still have lots more in the freezer but it amazes me that we haven’t needed to go to the store in ten days for anything.

Next summer, add canning your own Rotel type tomatoes to your canning tomato list. So easy and cheaper than the cans. I love having several around to use in the winter.

Monday is my son’s cooking night: spagetti with chilli, cherry tomatoes, parsley and prawns.
Tonight will be beef burgers for the men and a haloumi and mushroom burger for me. With home grown lettuce.
Wednesday will be salmon, oven potatoes (home grown) and salad
Thursday will be whatever is in the fridge, as I am hosting Girls’ Board games Night so will bake a blueberry yogurt cake to have with Prosecco/tea and coffee
Friday is always homemade pizza night, which my husband is in charge of.

Potato soup following dental appointment/filling for 1 kid, simple food for rest of week while prepping for son’s 18th birthday party over the weekend. Then spent Sunday/Monday in bed sick so family ate party leftovers.

I made the meat pie using some leftover tenderloin and a puff pastry that was languishing in the freezing. It was hit and will be going into our rotation.

Last week made “copycat Panera chicken and rice”, smoked some salmon and picked greens from the garden. Made elk stew on Saturday night and a “no knead” loaf- to which I added rosemary. Yu-um! We’re still eating left overs from all of those meals- rotating.
Love not having to cook during the week. Just come home, build a fire and reheat (if appropriate) and whichever I want. Happy girl.
