This past week was an easy one on the budget. I picked up a gallon of milk, some mozzarella, pepperoni and a 16 ounce bottle of eggnog. And then forgot to get a photo.
Oh well, at least I have pictures of what I made.
A roasted chicken dinner with carrots and parsnips. Does it get any better than that?
I don’t know why, but it always amazes me how many meals you can make from a single chicken.
Chicken curry. Have you tried it yet? The recipe I use makes enough to feed a family or dinner for two with plenty of leftovers.
And of course if you’re roasting a chicken, there’s always homemade chicken noodle soup.
The HH is the king of chicken noodle soup. Back in the days when he was working 80 hours a week and only cooking twice a year, this is one of the things he would make.
Now it seems like he’s making a batch at least once a month no matter what the weather is outside and I’m loving it.
I don’t know what it is about homemade chicken noodle soup that is so comforting, but it is.
For breakfast this past week we enjoyed simple things like oatmeal, Dutch oven bread and cinnamon raisin toast.
And one morning we had bacon, eggs and potatoes.
And then there was pizza night! Oh la la. I think I’ll be making this again.
It was a good week, with lots of yummy homemade foods. Now, if we could just get some snow. 😉

Curious about the price of your eggnog. I didn’t buy any on Saturday because it was $4.49 for a quart! That seemed way too expensive.

The freezer is being cooked down. What was thought to be 2 pkgs of liver was only one & a pkg of flank steak. So…liver & onions & bacon & gravy & mashed potatoes. I know that doesn’t appeal to everyone but I loved it. Enough for 3 meals. The flank steak was sliced up & marinated in a teriyaki sauce. It will be used in a rice bowl of sorts with sauteed mushrooms, cabbage, carrots, onions, zucchini. Your meals look delicious. I’m with you on the versatility of a roasted chicken. None of the 6 lb chicken I cook goes to waste. Meals for days. I’ll pick up an order of chickens next week from a local producer, thus the need to clear freezer space.

New to me, I tried out a recipe for crumpets. The recipe was forgiving and they were so easy and delicious to make. I will definitely be making them again. I also had a leftover pomegranate to use and ended up making ham, feta, and pomegranate roll ups that were good too.

I’ve read on this blog about the wonders of scrambled eggs using hoisin sauce. However, I cannot find a recipe that indicates how much to sauce to use. Is it right in front of my face and I’m just missing it?

Your remark about how many meals you can make with a chicken caught my attention. I remember my Grandmother telling me how she could eat all week with 1 chicken. She was 25 and married with 3 children in 1929. This included lunches for Grandfather – she made the best chicken salad ever, always using the old hand operated grinder she attached to the table. The depression had a lasting effect on how she lived the rest of her life, never wasting anything. And she had a lasting effect on me.

Grandma’s are the best. Although the only thing I remember my grandma teaching me is how to get dressed inside of my nightgown, modesty you know! I truly loved my grandma, she was so much fun.

Lots of sickies in my house this week. Or, just the husband. Whatever cold we had last week hit him HARD. Of course, the kids were barely sick. So, the grocery store last week had fresh turkeys for $10 after Thanksgiving. We didn’t cook a turkey on Thanksgiving. So, I bought one (smallest I could find…17 lb, originally $58).
Thus, I made turkey vegetable potato stew. Also made ginger carrot soup and butternut squash soup. And a sweet potato/ chard/ chickpea curry that is a staple.
The instant pot got major use this week…and there are 2 more 4-cup containers of turkey in the freezer for future enchiladas.

I made vegetable soup, ate some of it and froze the rest for later. Then yesterday one neighbor brought over her homemade butternut squash soup. An hour later another neighbor brought over homemade chili. I won’t have to worry about meal prep for quite a few days!
Might make your eight can taco soup next week and share it with the neighbors who shared their chili and butternut soup this week.

My 5 month old is still eating every hour 24/7, so I really can’t cook right now. So, my big cooking accomplishment this week was to make sugar cookies (and freeze the extra dough). It took me 3 days (one day to make the dough and another two before I had time to cut and bake), but they’re our favorite Christmas cookie, and we’re eating a lot of takeout at the moment, so it felt extra special.

Mel, I have an 8 month old so was recently in the same boat. Things have gotten a little easier recently — hope it’s the same for you, too. Enjoy those homemade cookies! I bet they taste extra good this year.

I’ve wanted a Kitchen Aid mixer for years and finally bought one on Cyber Monday. The first day it was in the house, I used it to make banana bread and mix up my granola. My husband is excited to try it to make pie crust and pizza dough. My toddler would probably love for me to test out the cookie making abilities!
