Some people hear winter squash and wonder why on earth I’m talking about it in the fall. The winter in the squash doesn’t refer to it’s growing period, but rather the season it can be eaten through with proper storage.
I’m a big winter squash fan, and not just because they look so cool. Most winter squashes are vine-type plants with fruits harvested when fully mature. Winter squash take longer to mature than summer squash {3+ months} and are best harvested once the cooler fall weather sets in. They can be stored for months in a cool dry place like a basement—hence the “winter” in their name.
Here are some of my very favorite winter squash recipes, broken down by type. Enjoy!
Acorn Squash
Acorn Squash Pie – Pumpkin pie on your menu? Try an acorn squash pie instead. It’s a flavor spin on a classic pumpkin pie. {Pin for Later}
Acorn Squash Soup with Kale – While I’m not the biggest kale fan, I loved it in this soup! If you find some cheap acorn squash at your supermarket, whip up this soup for dinner. {Pin for Later}
Roasted Acorn Squash – Easiest way to cook up winter squash? Try roasting it for an easy side to any meal. {Pin for Later}
Stuffed Acorn Squash – It’s stuffed with everything but the kitchen sink, and it ups the acorn squash game. {Pin for Later}
Butternut Squash
Butternut Squash Salad – Sometimes squash recipes seem heavy. Not when you throw them in a light salad! {Pin for Later}
Bacon and Butternut Squash Casserole – This recipe just goes to support the theory that everything is better with bacon in it. {Pin for Later}
Butternut Squash and Quinoa Salad – Quinoa is packed full of protein and is just as healthy as it is yummy. The HH loves when I pack this in his lunch. Healthy and tasty lunches? Mission accomplished. {Pin for Later}
Roasted Butternut Squash Lasagna – If you are looking for a meat-less dinner idea, you must give this one a whirl. Butternut squash in a lasagna? Yes. And it works magically. {Pin for Later}
Butternut Squash with Spinach and Pasta – This is one of those recipes that seems eccentric at first, but let me tell you, pasta and butternut squash should get married…they belong together. {Pin for Later}
Brown Sugar Hubbard Squash Pie – This pie is every bit as amazing as pumpkin. Maybe even better. Trust me. {Pin for Later}
Vegan Hubbard Squash Soup – This recipe alone is a reason to grow hubbard squash. It is so creamy and savory and delish. {Pin for Later}
Roasted Tomato Basil Spaghetti Squash – The basil/tomato/spaghetti squash combo is so so good. It feels lighter than a full plate of pasta, but has all of the rich flavor of a savory Italian dish. Mmmm mmmm good. {Pin for later}
Spaghetti Squash w/ Almonds – Strange pairing? Try it and you’ll probably agree it’s the new pb&j! {Pin for later}

Bought some butternut squash spiral noodles to try them. Squash in Fall is my favorite and I wanted to cook them with a different recipe. Have you tried spiral veggies?
