16 Vegetables You Can Harvest In 55 Days Or Less! – Last night I was working in the kitchen garden tidying up one of our raised beds {the one we just harvested garlic from} when I realized there are only about 2 months left in our growing season.
It’s hard to imagine that in just two months, it will be OCTOBER already! Yikes! Where did the time go this year? Anywho, I figured I might as well squeeze the most out of the summer growing season with another round of vegetables to maximize the growing potential in our little kitchen vegetable garden.
So far I’ve planted 2 rows of beets, and tomorrow I think I’ll plant another round of peas and maybe some beans too. Summer, it’s fading fast and if you’re thinking about getting a few more seeds in the ground before the first frost, here’s a list I’ve put together with 17 vegetables you can harvest in 55 days or less.

i’m pretending that i have succession planted my garden this year because it got planted so late! but it took longer than i planned to get the new beds setup and filled so i will enjoy the “second” crop of tomatoes and green beans and tomatoes!! when i get back from vacation in september i will begin the fall garden. zone 9 gives me a nice long season and time for my favorite season in the garden!

I live in planting zone 8 and there are a few things we can plant for a 2nd time. I will be planting tomatoes, bell peppers, beets, beans, pumpkins and watermelons this week and possibly cucumbers (if I can find some seeds). I will also be planting lavender, marigold, spearmint and thyme in cinder blocks (in the holes) that are placed around the garden to help keep the insects down to a minimum. I have never tried a “2nd planting” before so this should be interesting . . .

Mavis how are all the apple trees you planted doing? Any harvest from those?

Not yet but two of the trees have apples on them! I’ll take a picture.

I thought some of these were considered “cool weather vegetables” and didn’t do well in the heat of summer. Particularly peas, lettuce, and broccoli. Not so?

I suppose it depends where you live. These would ideally be planted 55 days back from your first frost date. 🙂

Just planted more green beans, yellow beans and peas. Will be planting more beets, carrots and spinach soon. Also will start more broccoli and brussels sprouts soon. The baby rabbit that chewed off the bottom of some of my snap peas this spring is now too big to get through the fence, so only the chipmunks to contend with now. 🙂

I just check our frost date and it’s Oct 26. It’s 100° all week and in the 90’s next week. A late planting will have to wait!
