{Black Bean and Cheese Quesadillas recipe}
Have you ever made homemade tortillas before? If you haven’t you should give them a try. But let me warn you, as soon as you do, you may never want to buy packaged tortillas again.
I first learned how to make homemade tortillas from my friend MamaJJ, and have been making them ever since.
Here is her simple {and delicious} recipe:

Ingredients
2 cups All purpose flour
1 tea Salt
1 1/2 tea Baking powder
2 tea Vegetable oil
3/4 cup Warm milk
Instructions
Mix dry with wet and knead for a few minutes.
Cover dough with a dish towel and allow to rest for 20 minutes.
Cut dough into 8 pieces, roll out into circles and fry in a cast iron skillet for 45 seconds on each side.
Fill with beans and rice. Enjoy!

I’m glad you like the tortillas—I often get cravings for that soft, chewy, toasted-floury flavor. Hm, maybe I should include tortillas and beans in this week’s menu plan…?

I made corn tortillas and lots of filling options for supper last night. I agree homemade tortillas whether corn or wheat are worth the extra effort.
Oh and I’m going to join your gardening challenge. We’ve been living in the country, but have to move back to our house in the city. So I’m going to get creative and see how much edible gardening space I can carve out. The rose bush will stay, but I think most of the other bushes will have to find a new home. I’m also toying with the idea of hauling in some dirt and turning our driveway into a garden. We’ll see what my husband says!

I make them for my diabetic husband, and weaned him off his California-raised flour tortilla habit, and his blood sugar is far better. When Mexicans switch from corn tortillas to flour, their rate of diabetes skyrockets. It became epidemic in Mexico’s northern states where they are most likely to be found. Maybe it is the GMO flour we all get now; I don’t know, but I do know that all that flour is not very healthy. If you cover them with beans or fill with a meat mixture, you’re going to get plenty of protein, so you don’t need the small amount that the flour will provide. When they started turning corn into methanol, they began starving people because the price of corn went up, and the very poor switched to the flour tortillas due to price, but they pay for it with their health. Diabetes begins with poor choices from childhood on, and flour tortillas are a poor choice for children and adults.
Mexican markets usually sell tortilla presses. Mine only cost about $4. Maseca is available everywhere. Try corn tortillas instead! Your health will reap the benefits.
