Having snow on the ground and being forced to stay inside in your pajamas all day has its benefits. For tonight’s dinner I made Guinness Beef Stew. St. Patrick’s Day is right around the corner. Only 10 days to be exact. The first time I made this hearty beef stew was right after we came home from our first trip to Ireland. The HH, The Girl, Monkey Boy and I took a tour of the Guinness Storehouse in Dublin. After the tour we went upstairs to the Guinness restaurant and had lunch. The kids enjoyed chicken and potatoes while the HH and I feasted on Guinness Beef Stew. The stew was very simple and had minimal ingredients: beef, parsnips, potatoes, celery, a little salt & pepper and a wee bit of Guinness. It was delicious.
Back then {in the old days} the recipe was not available. So as soon as we came home from our trip, I tried to recreate it. Below you will find the recipe I came up with and use. You won’t be disappointed. I promise.
St. Patrick’s Day Recipe: How to Make Guinness Beef Stew
Ingredients
2 lbs Beef Tips, cut into 1” chunks
6 Red Potatoes, quartered
3 Large Carrots, sliced into 1” thick
1 Yellow Onion, chopped
1 cup all-purpose Flour
1 teaspoon Salt
1 teaspoon Ground Pepper
8 cups Water
1 cup Guinness Stout
5+ tablespoons Olive Oil
Instructions
Start with 2lbs beef cut into 1″ chunks.
Coat the beef in a mixture of flour, salt and pepper.
Brown the meat in olive oil, over medium heat, in a dutch oven making sure to brown all sides of the meat. Placed cooked meat on a plate and set aside.
Then add 2 tablespoons of olive oil to your blackened and crusty pot. Toss in your chopped potatoes, carrots and onions and saute for 3 minutes.
Add the beef back to the pot.
Add 1 cup of Guinness Stout.
Serve with a hunk of crusty bread and butter.

Add 1 cup of Guinness Stout. Add 8 cups of warm water. Stir. Simmer soup for 2 hours.
Remove from heat and serve.
