We have a bunch of spinach that needs to be used up in the next few days, so I decided to give this recipe for spinach dip a try. Oh my! I just found a new favorite appetizer.
In fact I think I’m going to have to plant some more spinach seeds here pretty soon just so I can make this recipe again. It was totally delicious, and well worth the $1.99 I had to spend on cream cheese to make it. Yum-O!
PrintRecipe – Garlic Spinach Dip
Ingredients
8 cups fresh spinach, chopped
8oz cream cheese, softened
1/4 cup milk {I used 2%}
2 tablespoons garlic, minced
1/8 teaspoon salt
dash of hot pepper sauce {I used Frank’s hot sauce}
Hawaiian bread or crackers or dipping {I didn’t have Hawaiian bread so I chopped up Hawaiian buns}
Instructions
- Saute garlic for 1 minute.
- Add spinach and saute until wilted {about 2 minutes}.
- Place spinach and garlic mixture into a blender, add milk, salt, creamed cheese and hot pepper sauce and pulse and few times until your dip is somewhat smooth.
Notes
Serve warm or cold.
If you are a gardener or a buy your produce when it is in season, you’ll want to check out Simply in Season Expanded Edition. Amazon currently has it on sale for $13.59. Simply in Season is broken down in to what’s fresh for each season. So there will won’t be any recipes containing corn in the spring section or any recipes for strawberries in the winter. I own this cookbook and I love it!

Can I plant spinach again in early Fall? Mine all bolted already, which I’m pretty sure is because in such a hot climate. Would love to plant more b/c it does so well, but I feel like it’s too hot for us right now. Recipe looks awesome!

I have so much spinach its not funny, I was looking for a spinach dip on the weekend and all of the recipes that I found used frozen spinach.
I’m going to try yours but might add some sour cream as well and put it in a hollowed out Cob Loaf
Thanks Mavis.

This sounds so much better than the normal spinach recipe where you use the Knorr mix. I find myself always picking out things – this has everything we’d love. I might add some water chestnuts though because I’ve always loved that in my spinach dip. Yum – thanks, Miss Mavis!

I made this the other day for a BBQ and then used some today in place of pizza sauce. Threw red peppers, asparagus and feta on top. Oh. My.
