Holy crackers Batman! Who knew bacon and corn tastes so perfect together?
I know corn isn’t quite in season yet, but if you come across a good deal on corn, grab a few ears and whip up this side dish. You won’t regret it! I promise.
PrintRecipe – Roasted Corn with Bacon -The Best Side Dish Ever!
Ingredients
6 slices bacon {reserve bacon drippings}
4 cups corn kernels, fresh
3 scallions, sliced thin, including greens
1 tablespoon unsalted butter
1 teaspoon garlic, minced
1/2 teaspoon black pepper
1/2 teaspoon salt
Instructions
- Fry bacon til nice and crisp. Set on paper towels to train.
- In the same pan with the bacon grease fry scallions until lightly browned, add corn kernels, butter, salt and pepper.
- Cook until the corn mixture is golden, stirring occasionally {about 5 minutes}.
- Add garlic when there is about 1 minute of cooking time left. Serve warm or cold.

Oh my goodnes… that looks amazing! My corn should be ripe this week or sometime this weekend.
QUestion for you about corn. How do you know FOR SURE that it’s ripe? Can it stay on the stalk too long? Also, I left the shoots (at least that’s what I call them) on the main stalk and now they’ve grown corn as well. Should I have removed the shoots? Whoops!

Wow, I just came across your blog and I have to say I am impressed by your accomplishments. I asked one of our local grocery stores a couple years back about produce for our chickens and they said they used to give it away but the parent company said no more after lawsuits. Notice on the Sept 7, 2015 post that you freeze this. Can you explain the method? Do you make the recipe then rewarm? If yes then how? It sounds really good and I just love freezer recipes! Thanks!
