Last week I made a raspberry buckle, and the Handsome Husband was talking about it for days. Seriously. It was kind of weird actually. He never goes on and on about anything. Unless it’s some dumb video game or he’s complaining that we don’t have any Doritos in the house.
So this week, I decided to try and find similar {but totally different} berry dessert recipe to make him.
And I hit the jackpot.
This one’s a keeper!
Easy Summer Recipes – Triple Berry Cornmeal Cake
Ingredients
1 1/4 cups all-purpose flour
1/2 cup yellow cornmeal
2 teaspoons baking powder
1 teaspoon salt
1 cup sugar + 1/4 cup for topping
1/2 cup buttermilk
2 large eggs
7 tablespoons unsalted butter, melted, plus 1 tablespoon for pan
1 pint mixed berries {preferably fresh}
Instructions
- Preheat oven to 375 degrees.
- Mix together the flour, cornmeal, baking powder, salt, and 1 cup of sugar. Add the buttermilk, eggs, and melted butter and combine.
- Place 1 tablespoon of butter in a cast iron skillet and place in the oven to melt the butter. Brush the butter on the bottom of the pan and along the sides.
- Pour cornmeal batter into the skillet, and in a very OCD manner, place the berries on top. Sprinkle with 1/4 cup sugar.
- Bake 40 -45 minutes or until the cake is lightly browned and the center is set.
- Cool. Serve with fresh whipping cream.

I might be baking mine out in the sun though…”they” (whoever “they” are) are predicting 51 straight days of temps over 100F for my area! I hope the garden survives! Be glad for being in the PNW.

Mine’s in the oven now, with a little freshly ground cardamom in the batter. Based on the delicious bits on the wisk, it really adds something special to the cake!
