If you have never grown heirloom tomatoes before, you are truly missing out. Not only are the colors amazing, but the flavors are too. Ours heirloom tomatoes have started to trickle in, and although there are not enough for a giant batch of homemade pasta sauce yet, there is enough for a batch of homemade salsa everyday.
Here is my simple recipe for Rainbow Salsa. I hope you like it, we do!

Ingredients
2 cups chopped heirloom tomatoes {in various colors}
1/2 chopped sweet onion {I used a Walla Walla sweet}
2 tablespoons chopped cilantro
2 tablespoons lime juice {I used bottled}
1 jalapeno, seeded and finely chopped
1/4 teaspoon salt
dash of pepper {optional}
Instructions
- Toss all the ingredients into a bowl and stir.
- Let stand for 30 minutes before serving.

You will think I am a nut as I grow tomatoes every year for sauces and roasting but don’t like them fresh. However the colors of yours all together in the pictures make my mouth water. Don’t you just love the colors of summer?

Mavis, when u make this salsa, so you leave the seeds and pulp in, or remove this before chopping the tomatoes??
