This week I’m giving away 2 Autographed Barefoot Contessa Books
The Girl and I heard Ina Garten was coming to town and decided to buy a pair of tickets at the last minute. Full price tickets were $54 each, but we were able to find half price tickets on GoldStarEvents.com. Ina and local chef Greg Atkinson sat in over-sized chairs on stage and chatted for over an hour before taking questions from the audience members.
My favorite part about the whole event {besides the part where I made an idiot of myself and said “I think you’re awesome” as she signed my books} was when a lady asked Ina what were some of the crazy things companies tried to get her to sell over the years.
Ina laughed, and said someone wanted her to sell a line of Barefoot Contessa clothing.
Her response?
“I wear the same outfit everyday,” she said as she starting laughing again.
It was awesome. Her response to that comment made my day.

My daughter loves to make Ina’s Brownie Pudding every year on Christmas Eve for dessert. Have you tried it? It is da’ bomb.

My favorite recipe of Ina’s that I make all the time is Ricotta Herb cheese. It is a recipe for making ricotta from scratch and seasoning it. I will never buy store ricotta again after using her recipe.

I would love to have either cookbook, but would probably prefer the Barefoot Contessa Cookbook. My husband and I are huge fans of her Lobster Roll recipe (listed below). We don’t get a huge chance to get a lot of good lobster in New Mexico, but on occasion we do get it. This recipe is tasty and easy. Paired with homemade fries or chips (she has good recipes for these as well) it is awesome.
3/4 pound cooked fresh lobster meat, diced
1/2 cup good mayonnaise
1/2 cup finely diced celery (1 1/2 stalks)
1 tablespoon capers, drained
1 1/2 tablespoons finely minced fresh dill
Pinch of kosher salt
Pinch of freshly ground black pepper
8 hot dog rolls, grilled or toasted
Combine the lobster, mayonnaise, celery, capers, dill, salt, and pepper. Fill each roll and serve.
