As I was typing this up, I was trying to remember where I got the bowl the potatoes are sitting in. Then I remembered. The bowl came from my neighbors EPIC garage sale. Go take a look and you’ll see all the loot I was able to score for ultra cheap. The only thing not pictured are the two enormous glass sconces I scored later that afternoon when I went back to see if there was anything else. Man, I LOVE garage sales.
Anywho, this potato salad rocks. It’s kind of a manly man salad too, being how it has potatoes in it and all. So if your Handsome Husband, Boyfriend, or Random Guy off the street starts to complain, you can just say “Dude, it’s a man salad, just try it.”
Here is the recipe. I hope you like it. We sure do.
PrintDijon Potato Salad with Green Onions Recipe
Ingredients
1 1/2 pounds new potatoes {I used red and Yukon}
3 green onions, chopped
2 tablespoons olive oil
1 tablespoon white wine vinegar
1 tablespoon Dijon mustard
salt and pepper to taste
Instructions
- Boil potatoes in water until cooked, but slightly firm.
- Let potatoes cool down a bit and then slice the larger ones in half.
- In a large bowl, combine the olive oil, vinegar, Dijon, salt and pepper and whisk together.
- Add green onions, potatoes and toss.
- Serve as a potato salad in the summer time or with a nice, fat juicy sandwich in the winter.

We got 8 ears of corn, 2 12oz containers of baby kale and a 12oz bag of baby spinach this week as part of our reclaimed produce….so stir fried greens with hard boiled eggs, corn on the Cobb, and left over “bones and blood” (garlic bread sticks and marinara sauce) it was. We ate all the greens- that’s an entire bag of greens each! Wow!
