Last week when we received a head of cauliflower in our reclaimed produce box, it took me a few minutes to figure out what I was going to do with it. Roasted cauliflower with curry!
Luckily I had been cleaning out the spice cupboard earlier that day and the curry container was still out on the counter. Weeee! I love when stuff like that happens. It’s like it was meant to be! Our whole family LOVES curry so it was a hit!
This recipe for roasted cauliflower curry is awesome. You should try it. You’ll be so glad you did. 🙂

PrintRoasted Cauliflower with Curry
Ingredients
1 head of cauliflower, cut into small florets
3 cloves of garlic, minced
2 Tablespoons olive oil
1 teaspoon curry powder
3/4 teaspoon salt
1/4 teaspoon ground pepper
Instructions
Preheat the oven to 400°F.
Chop cauliflower into florets and steam until tender. Place the softened cauliflower and all the ingredients onto a baking sheet and toss with garlic, olive oil, curry powder and salt and pepper.
Roast for 20 minutes {give the pan a shake every 5 minutes or so} until lightly browned. Serve warm.

We roast our with olive oil and garlic then shave some parmesan cheese on it and its great. I can’t wait to try out your recipe!

Love your website, and saw this recipe……along with grilled chicken, grilled pork, sauteed green beans, boiled potatoes, I had the whole head of cauliflower. OMG, was it good! I changed it up a little bit. I steamed the cauliflower, cut in chunks a little bit. Then I transferred all the cauliflower to an oven safe dish. Chopped it up with a fork and knife, with making smaller florets. Then added the olive oil, garlic, etc….stirred, and stuck it in the oven, while the chicken, and pork chops cooked. I also added a touch of Turmeric to the cauliflower. I did pull it out every 5 minutes, and stirred. Next time, I will definately chop up the cauliflower before cooking, just for ease of cooking….. But this was the best side dish ever! Thank you. I have some left overs that I’m going to eat today. 🙂
