Chicken pot pies are on the dinner menu tonight. If you’ve never made a homemade chicken pot pie from scratch before, not only are they super easy to make, but they taste 10 million and 1 times better than those frozen ones you can find in the frozen food section of local grocery store.
Here is my no fail recipe with tons of pictures and freezer meal option as well.
Ingredients
3 cooked chicken breasts, shredded
1 can of corn kernels, drained
2 medium potatoes, cooked and cut into chunks
1 jar Heinz chicken gravy {or homemade}
1 egg {for egg wash}
1 double pie crust
salt and pepper to taste
Directions
In a large bowl combine chicken, corn, potato, gravy, salt and pepper and combine. Scoop mixture into individual pie plates or large ramekins. Cover with pie crust and brush an egg wash over the top. Bake at 350 until gravy bubbles and pie crust tops are a nice golden brown {about 30-45 minutes}. Cool slightly and serve. Yield 4 servings.
Want to make a few extra pot pies to toss in the freezer so you can pull them out on a busy weeknight? Simply double the recipe, add a few more veggies if you’d like, find some 9 inch pie pans and do the same thing I did above but instead of cooking them in the oven immediately, wrap them up with foil, label and pop them in the freezer instead.
To bake a chicken pot pie from frozen, place it on a cookie sheet and bake at 350 degrees for 30 minutes with the foil covering the pot pie. After 30 minutes, carefully remove the foil and bake for an additional 30 minutes or until the crust is a nice golden brown and the juices are bubbling.

Delicious looking meal there!! I love doing this with leftovers. If we have a roasted chicken on Sunday, then Monday night is usually chicken pot pie night. I use the leftover chicken, gravy and (usually) mixed vegetables that are left over and I make one regular sized pie w/top and bottom crusts. Sooooo delicious, super easy and ALWAYS gobbled up! Yummy!

Funny you would post this! I was just making freezer meals after cooking up a Thanksgiving sale turkey and after several quesadilla mix packages, I made a homemade chicken (turkey) pot pie for the freezer. Was thinking of making another one for dinner tomorrow!

These look great, I have a turkey in the freezer I was looking for a way to use up. Maybe this weekend I’ll make a bunch – they look like they would make good freezer meals for an easy reheat weekday dinner.

We make chicken pot pies all the time. Have you ever canned the filling?? I just tried it today, as we had lots of leftover filling. i ended up with 7 quarts.
