It’s days like today that I am so glad I own a crock pot. This afternoon when I walked in from playing in the dirt all morning, a batch of homemade white bean chicken chili was waiting for me. And all I had to do was find a bowl.
I’m sure you can tell by now I like simple foods. And let me tell you Bob, if you’ve got 5 minutes, you’ll want to make this.
Ingredients
1 pound boneless chicken breast, cooked and shredded
1 medium onion, chopped
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried cilantro
4 garlic cloves, minced
2 cans {15 ounces each} white kidney beans, rinsed and drained
4 cups chicken broth
Toppings {optional}
cheddar cheese
sour cream
green onions
Directions
Saute the chopped onion in olive oil and toss everything into the crock pot. Cook on low for 4 to 6 hours and serve warm with a nice hunk of bread and butter.

I made white chicken chili tonight too! Great minds think alike =) I always put a can of diced green chiles and some frozen corn as well.

Sounds so good. I’ve never made chicken chili before, can you believe it. So want to try it. I’ve started a 40 day challenge to get healthy for my birthday next month, and this will be perfect for my eating.
BTW I don’t comment much on your blog, but I am a HUGE fan. I LOVE , LOVE , LOVE what you have accomplished. I’ve actually tried asking my grocer if he would give me chicken scraps and no luck so far.

I add about a half of a jar of salsa to mine. I’ve tried different flavors, including organic black bean salsa and artichoke. Made this on Monday, perfect for a cold day in western NY!

I made this for our dinner tonight. The things I did differently were to add raw cubed chicken but forgot the garlic. It was delicious, but had a LOT of liquid in it, so it was a soup rather than a chili. I used 2 cups of homemade pinto beans and 1 can of rinsed and drained cannellini beans. I forgot to drain my homemade beans, but there shouldn’t have been so much liquid in them to make the delicious result like a soup. I only used 4 cups of homemade chicken stock, too.
The dish was a hit, and to help try to thicken it, we served it in a bowl on top of rice. Next time I make it, I’ll try adding just 2 cups of chicken stock and can always add more if it seems dry. All but my pickiest kid liked it. He’s not a fan of beans except for refried.

Would this work with dried beans? I always have them on hand, but rarely buy canned beans because of the price difference. Not sure how much to add, maybe 1 cup of dry beans?
