I made a batch of taco soup this morning for dinner tonight and it turned out awesome! I had a big bowl of of the stuff for lunch, and it was mighty tasty if I do say so myself.
You probably already know by now how much I love my crock pot. Yep, I pretty much want to marry it because it makes dinner time so easy. If you don’t own a crock pot, you need one. Seriously. Everyone should own one. Well, unless of course you live in a yurt in Mongolia and don’t have electricity.
Here is my recipe:
Ingredients
1 pound ground beef, buffalo, venison, chicken, possum {whatever you make tacos with}
1 onion, chopped
2 cups pinto beans soaked overnight, or 2 {15 oz} cans drained and rinsed pinto or black beans
2 cups corn kernels
1 cup pasta sauce
2 cups water
2 {14.5 ounce} cans peeled and diced tomatoes
2 tablespoons DIY Taco Seasoning or 1 {1.25 ounce} package taco seasoning mix
Directions
Cook the ground meat over medium heat until cook thoroughly and browned. Stir in tacon seasoning and let rest for a few minutes. Add all the ingredients to the crock pot, cover, and cook on low for 8 hours or high for 4 hours.
Serve warm with tortilla .

Forgot to add that I make my own taco seasoning, as the store packaged is a bit too salty for my taste.
1 tbsp. chili powder
2 tsp. onion powder
1 tsp. each ground cumin, garlic powder, paprika, powdered oregano
IF needed, will add a dash of sea salt
Mix all ingredients together in a small bowl. Makes about 3 tablespoons of seasoning mix, which is equal in strength to a 1/4 ounce package of commercial seasoning mix.

Add a package of dry ranch dressing or even a dollop of regular ranch dressing a few minutes before finished cooking. Stir it in well. It adds a little extra zip.

any suggestions for storing the leftover spaghetti sauce? I see a lot of recipes for using 1 cup of something like this and avoid doing the recipe because I don’t want to waste the rest of the jar of pasta sauce.

I free my extra sauce in one cup portions. 🙂

You could also just buy an 8 oz. can of sauce. I bet it wouldn’t matter, with all the other flavors going on.

Loved the recipe even when I substituted the pinto beans with white beans and the corn with chopped kale. Delish!!!

I don’t have a crock pot. Can crock pot recipes be made without a crock pot? How long would you cook the soup on top of the stove? Thanks.

They sure can {but I totally recommend buying a crock pot!!}. In this case, I’d use canned beans and not dry, and follow the instructions to brown the meat first. Bring everything to a boil, and then simmer for about 30 minutes. That should give the flavors time to meld. Let us know how it turns out!

I made Taco soup without the crock pot and it turned out fine. Everyone liked it and we had enough for leftovers the next day, Thanks for the recipe that didn’t call for lots of ingredients.
