Did I ever tell you the Handsome Husband is Irish?
Well one of his favorite soups is Guinness Beef Stew. This classic stew is great to serve anytime of year, but especially on St. Patrick’s day with a chuck of Irish Soda Bread for dinner.
I’ve tweaked this recipe over the years, and this one is my favorite. I hope you like it.

St. Patrick’s Day Recipe – Guinness Beef Stew
Ingredients
2 lbs beef tips, cut into 1″ chunks
1 pound potatoes, chopped
3 large carrots, sliced 1″ thick
1 yellow onion, chopped
1 teaspoon salt
1 teaspoon ground pepper
6 cups beef broth
1 cup Guinness Stout
5+ tablespoons Olive Oil
Instructions
Saute beef, carrots, potatoes and onions in olive oil over medium heat until nicely browned.
Add Guinness, beef broth and simmer soup for 2 hours, stirring occasionally. Remove from heat and serve.

Yum Yum!!! With 8 inches of new snow today, this soup sounded like just the ticket and it was. I used deer stew meat and it turned out wonderfully. I didn’t have any Guinness on hand and wasn’t going out to buy any. So, I used a bottle of Blue Moon, a much lighter ale. This soup is definitely on the make again list. The kitchen smelled divine–soup simmering on the stove and bread in the bread machine. Thanks, Mavis!

I’ve used evrything from Pecan Porter tp Modelo and made it with potatoes in and out, more or less carrots and so on. Its all good and leftovers are nonexistant. Also good with jalepeno cornbread.

How would you cook this in the crockpot?

I would brown the beef first then toss everything into the crock pot and turn it on high for 4 hours or low for 6. 🙂

I just made this in my crock pot. I browned the vegetables with the beef first (per the directions) and then put everything in the crock pot and cooked it on high for 5 hours or so. Oh my, it is so delicious! I also made the Irish Soda Bread and that is so good too. I’ll definitely make this again. Really easy, too. Thanks for the recipe, Mavis. 🙂

I have made this a few times on the stove and in the crockpot. Both ways are awesome! Today it is being made with venison, with the Itish soda bread of course 😉
