We’ve been eating a lot of chicken this week and last night I noticed some leftover mashed potatoes in the refrigerator so I decided to whip up a quick and easy chicken casserole with a mashed potato topping.
Holy cats! Next time I’ll make a double batch because this casserole went quick!

Ingredients
3 cooked chicken breasts, shredded
2 cups corn kernels {I used frozen}
2 cups peas {I used frozen}
2 cups leftover mashed potatoes
2 medium potatoes, cut in to chunks
1 large carrot, chopped
1 jar Heinz chicken gravy {or 2 cups homemade}
1 tablespoon olive oil
1 teaspoon dried thyme
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Instructions
In a large skillet saute the potatoes and carrots in olive oil over low heat until fork tender. Cool and set aside.
Place all the ingredients, except the mashed potatoes in a large bowl and mix well.
Spray a 9×13 pan in olive oil and add chicken mixture. Top with mashed potatoes and bake at 350 for 30 minutes or until the potatoes are lightly browned.
Serve warm.

Ever feel bad about eating chicken after keeping chickens? I have started feeling a little bad about it myself. I have stopped eating grocery store chicken after I found out how they are treated but when I eat a whole food chicken that had a good life I still feel like it isn’t right.

You could by it would change the texture of the mashed potatoes.

Thought this was delicious! I’d recommend omitting the extra potato chunks that are in the casserole and just stick with the mashed potatoes on top. It was way too much potato for us. Taste was on point aside from that. We just picked the extra potato out.
