SAUSAGE LENTIL STEW

**Line your crock pot– make life easier**
Pour in 1 32 oz box of beef stock– Next add 1 1/2 Cup rinsed, dry green lentils– 1/2 of a bag of baby carrots, sliced into 3rds– 3-4 stalks of celery sliced– 1/2 large yellow onion, diced– 1 1/2 kielbasa sausages (Ekrich is my fave) sliced lengthwise and then into 1/2″ chunks– 1 large Bay leaf.
Cover and cook on high for 4-6hrs– or on low for 8. **Remove the Bay leaf** Then add in: 1 large can diced tomatoes– 1-2 tsp ground cumin– Tobasco sauce if desired– add salt if needed– let it come back to temp and serve. I like it a bit heartier so I will also add about 1/2 Cup instant brown rice and let it hang out another 20 minutes to cook
This is stick to your ribs stuff– pretty healthy (especially if you use turkey sausage) economical (I often get my kielbasa on a buy one get one…) and since dry lentils don’t require any soaking– it’s easy to make.
**NOTE** if you are a vegetarian– you can swap out veggie stock for the beef and skip the sausage– you’ll want to add additional salt though.

Ham Hock stock and meat (prepared the day before )
Lentils
split peas
butter beans
any other type of pulse you have left over
Carrots
parsnip
sweede
leek
potatoes
peppers
onion
nay other seasonal veg
any leftover dinner meat (I did once find mince in the soup at my grandmas!!!)
combine all of the above and cook for an hour.
Every pot of soup is different!! and taste great.
