I whipped up a few freezer meals a few weeks ago and this recipe for cilantro lime chicken has got to be my favorite so far. We made a pot of rice in the rice cooker to go with it and everyone in our house love it. Cilantro lime chicken, I love you!.
PrintFreezer Meal Recipe – Cilantro Lime Chicken
Ingredients
3 or 4 chicken breasts
1/4 cup lime juice
1 bunch fresh cilantro, chopped
2 cups frozen corn
2 garlic cloves, minced
1/2 onion, chopped
1 can {1 1/2 cups} black beans, drained and rinsed
1 tsp cumin
Instructions
Place all the ingredients in a resealable gallon-sized freezer bag and pop it in the freezer. When you are ready to prepare your meal simply thaw the bag in a bowl in the refrigerator overnight. Empty contents into a slow cooker and cook for 8 hours on low or 4- 6 hours on high until the chicken is cooked thoroughly.
Serve over rice or with tortillas and all the fixings.

Well I have to say this was very yummy! Big hit at the house. But I think you may need to add more liquid to it then just 1/4 cup of lime. Mine was close to burning. Has anyone else tried it and found they needed more liquid?

This looks super good! I just bought a HUGE bag of fresh cilantro @ Costco for $3.49( mine isnt fully growed yet :- )) and will be making this recipe.
After reading acouple of comments saying it was a bit dry, I’m going to add some grape tomatoes cut in half as well.

I wasn’t sure this recipe would work since nothing was browned in advance, but it was great–thank you! I did add salt and pepper, plus 2/3 c. water because I was nervous about the liquids. I got a saucy result, which was lovely over rice with salsa and cheese. My family loved it. I might add some zest at the end next time to boost the lime flavor.

Must try this! Have to say my cilantro came and went pretty quick! I don’t use that much day to day and my husband doesn’t care overly for the taste.
Still the flowers are gorgeous and I am telling myself I was only growing it for the seeds ……..

I sure wish I could say I love this recipe. Unfortunately, I followed the directions exactly as listed and when I got home it was burned. So, I would definitely say if you are following the 8 hour on low version – add some extra liquid.

I’m sorry to say this but this was the worst recipe I’ve ever made. Dried out chicken and NO flavor. Even my husband said it was horrible and he likes everything.
