I only went to the store once last week, but here’s what I picked up:

I ran in for milk and weenies {for the boys} and was cruising past the meat section to look for manager markdowns when I spotted $3.00 off stickers on a couple of packages of chicken thighs and drumsticks. Normally I just stick to Zaycon boneless chicken breasts but decided to pick up the discounted meat on a whim. Stay turned for some recipes.
Mr. Produce Guy – FREE
Seriously, who needs to shop at the grocery store when you can get all of this fresh produce for free? I made a few loaves of banana bread, grilled some corn, made a blackberry cobbler, whipped up a batch of strawberry smoothies, used the tomatoes for chicken soft tacos and snacked on everything else.
Farmer Ted – FREE
The Handsome Husband came home with a 30 pound box of free rhubarb for me. His co-worker Farmer Ted had given it to him. Ted knows I’m all into gardening and growing food and thought I’d like to have a box. But 30 pounds? Holy stalks! What am I suppose to do with all of it?
I did end up giving about 10 pounds of it away to my neighbor Hudla, she has guests this week so I’ll have to find out what she’s doing with hers, unless YOU have some recipes for me. I know a rhubarb crisp is on the menu but I’ll have to do some digging in my cookbooks to see what else I can whip up.

You could do a rhubarb/strawberry pie! There’s nothing like it! My mother used to make a rhubarb tapioca dessert that was really good too!

Rhubarb freezes very well. Just slice it up and freeze in ziplocs. My Mom used to make rhubarb sauce which is pretty much like making applesauce with much more sugar. It is delicious over ice cream or on toast or spooned over many other items. Rhubarb pie is also a family favorite and would use up some of the strawberries that you are getting. There is also a yummy rhubarb cake recipe that I am sure is out there on the web. Strawberry rhubarb jam is absolutely delicious and easy to make and can. I am envious!

In “Thy Hand Hath Provided” there is a recipe for rhubarb coffee cake & one for sour rhubarb crunch.
Freezing it sounds like a plan too.

I’ve made this pie several times, and yeah, it’s good.
Also, some years I’ve made a rhubarb syrup that’s mixed with 7-up for a homemade rhubarb soda.

The best way I have ever had rhubarb and people bring me rhubarb every year to make them one and one for myself:
My mother’s recipe Rhubarb Custard Pie – Yummylishious!!!
3 eggs beat slightly, add 3 Tablespoons of milk and 2 cups sugar and mix together. Mix together 1/4 cup flour, 3/4 teaspoon nutmeg then stir into mixture along with 4 cups sliced rhubarb. Pour into pastry lined pie pan, dot with 1 tablespoon butter, cover with pastry lattice top. Bake at 400 degrees for 50-60 minutes. Let cool before cutting, store in frig due to custard. Can be eaten cold or warm…… died and gone to heaven taste!

Easy peasy but it takes about 20 to 25 lbs plus 11 lbs. sugar and a 5 or 6 gallon carboy and/or food grade bucket and a nice wine yeast. You can by wine yeast and carboys on line or at your local home brew supply. Once you have your basic equipment ( $60 bucks or so) you’ll be brewing pumpkin and blackberry too. We’re talking 5 or 6 gallons of wine here!!!! Perfect for gift giving.

Just completed making the following with my Rhubarb glut from the garden – a Rhubarb Tartlet with a Ginger Nut Crumble (uses 1 kilo/ 2 lbs of rhubarb); Rhubarb & Strawberry compote for breakfasts this week; Strawberries with rhubarb & mascarpone cheese for desserts & a few jars of Spiced Rhubarb Chutney. Just love rhubarb & grows exceptionally well in the West of Ireland.

Hi Mavis, I live in County Tipperary, the same province as Dingle i.e. Munster but a different county. Yes, I saw on your blog you have visited Ireland. Next time head for the Loop Head peninsula in County Clare, Munster for a less touristy adventure than Dingle. Regarding your search for chard & kale recipes, I can wholeheartedly recommend Kale & Mushroom Lasagne, Chard & New Potato Curry and Kale & Onion Pizza. I use ‘River Cottage Veg Everyday’ cookbook and just adapt them to suit us. Any dish that gets 8 out of 10 and above is filed away for use in the future, anything less – then never again!!

In one of my canning books there is a recipe for canned rhubarb juice concentrate. (Here in Canada it’s the Bernardin Complete Book of Home Preserving… but I think in the US it’s under the Ball brand) It tastes like a nice fresh rhubarb-y lemonade and uses up lots of extra rhubarb.

Well Mavis, I’ve been harvesting from my BIG OL rhubarb plants and we had rhubarb coffee cake a few times, and I canned some rhubarb chutney (from ‘Food in Jars’). When it grows back a little of what I’ve picked I found a rhubarb and orange jam recipe that uses a pound bag of orange slice candies (I love vintage canning books). Enjoy that rhubarb!

I make Rhubarb Custard Bars when I am lucky enough to get rhubarb from friends (we planted some this year so I hope to harvest our own next year) and they are deeelish! This was a Cooking Light revamp and I like it more than the original recipe.

I’m guessing you’ve never had Strawberry-Rhubarb pie. If you had, you would have already started making some….lots of them. Unfortunately I don’t have a favorite recipe, but no doubt you can come up with one pretty easy. Seriously, you have got to try it!

Stacie beat me to it: rhubarb is nice with orange. I like to stew it with some orange zest (and sugar of course) and then serve it like applesauce or over oatmeal or, cooled, yogurt.

Hi Marvis, we keep it simple and just rough chop it, boil it down with a little water, some sugar (depending how sweet you like it) and add in some strawberries- delish on ice cream, oatmeal or by itself! Enjoy!

I always prepare the filling for strawberry rhubarb pie and freeze it in individual bags. When I’m ready to make a pie all I have to do is the crust because the filling is pre made in the freezer bags. Nothing like strawberry rhubarb pie in November!

Oh my! I’d love to be your neighbor when the rhubarb is being passed around. There’s rhubarb and strawberry/rhubarb pie and rhubarb custard pie, rhubarb muffins, coffiee cake, all sorts of rhubarb/? jam, chutney was mentioned, upside down rhubarb cake. Google rhubarb recipies. You’ll be over whelmed. Or go to Taste of Home and search for rhubarb, or one of the other recipie sites. Such goodness. And you could freeze some for use during the year. Methinks you’re going to be a very busy girl for a while!

Here is the easiest rhubarb cake you will ever find.
Viola’s Easy Rhubarb Cake
1 box yellow cake mix, following prep directions except upping the eggs to 4.
1 pkg mini marshmallows
1 scant tsp cinnamon
2 Cups cut up rhubarb, up to 3 cups if you prefer more fruit.
Set oven to 350 degrees. Prep 9×13 pan with grease and flour, do not skip the flour and grease the pan well. Add rhubarb, spreading evenly. Pour marshmallows over rhubarb evenly to cover. Sprinkle with cinnamon. Prepare cake batter and pour over contents of the pan and spread to cover. Bake as directed on cake mix box, testing for doneness with knife This is yummy and you do not have to add a lot of extra sugar to sweeten the fruit!
Man do I wish I had a neighbor wanting to be rid of rhubarb, here the price is out of sight!

The Berryland Cafe in the middle of downtown sold a rhubarb recipe book last year! Wanted to let you know that you are on the cutting edge of trends.

Rhubarb is fantastic if you chop it up, put it in a saucepan, pour some sugar over the top, and heat on low until all bubbly and saucy – just keep an eye on it and stir occasionally and before you know it you will have a heavenly sauce. I like to put it over oatmeal, granola, ice cream, etc… it is delicious! I have also heard of people making rhubarb wine but have never tried it myself – could be an interesting experiment! 🙂
