Now that summer vacation has finally arrived for my kids, I have turned into a popsicle making freak. Seriously. Just wait until you see all the yummy recipes start to pop up and you’ll turn into a “popscicles are on the menu for dessert tonight” mamma too.
The number one reason why I love this recipe is because it is a fantastic way to use up brown spotted {ripe!} bananas. Once your bananas start to get brown, toss them in a gallon sized zip baggie and put them in the freezer until your ready to use them.

Ingredients
- 6 bananas (, frozen {peeled of course})
- 4 tablespoons of cocoa powder
- 1 teaspoon of pure vanilla extract
Instructions
- I like to take the bananas out of the freezer a good 30 minutes or so before I start. This will give the bananas a chance to thaw a wee bit so when you toss them in the blender, you don’t break the thing.
- Once your bananas are thawed somewhat {but still frozen} place them in a blender {I used my Blendtec}. Add the cocoa and vanilla and pulse until well blended. Pour the mixture into popsicle molds and freeze overnight.
- The next day they’ll be ready to serve. Yumm-a-licious!

A sneaky treat, no one will ever guess the secret ingredient in these ultra creamy, healthy pops!
Ingredients
1 cup coconut milk (I have used regular and light with no discernible difference)
6 tablespoons unsweetened cocoa powder (I love Dagoba)
2 fresh, ripe avocados, smallish
¼ cup honey, or more to taste (coconut nectar or maple syrup would also work)
Dash of salt (this heightens the chocolate flavor)
Instructions
Puree the whole mixture in your blender until creamy and smooth. Feel free to add more cocoa or sweetener to suit your tastes.
Fill your molds, freeze, or store in the fridge for a yummy pudding!!

I’ve made this recipe for Frozen Creamy Coconut Bars several times – SO good!
In a bowl mix 14 oz light coconut milk, 1/4 c. sugar, 1/4t. vanilla and a pinch of salt. Stir in 1 c flaked coconut. Freeze for 6 hours!

Hi Mavis – I added a little milk since my blender wasn’t spinning enough since it’s just a cheapie. Tastes great though – if they’re as tasty frozen as it is out of the blender as they are frozen, they’ll be a big hit. (no to mention no added fat or sugar.

I think my bananas were mushier, so the consistency was a little different. Did the milk make them creamier?

My kids liked them, but I thought they were disgusting. I had to add milk and honey to get a reasonable consistency and not blow out my Vitamix! A half recipe (with my additions) filled the group of 6 Tuperware popsicle molds and had enough for a cup leftover for eating right away. I’m still looking for a good fudgesicle recipe.
