I think there might be something wrong with me because I can’t stop making lentil stews. I am offically addicted. And so is the HH. It’s crazy. We have totally turned in to lentil weirdos. Pretty soon we’ll be making macrame plant holders and playing the flute.
This recipe rocks! Oh, and it’s good for you too. 🙂
Ingredients
1 1/2 cups pumpkin puree {How to make pumpkin puree}
1 15-ounce can chickpeas, drained
3 medium carrots, chopped
1 large onion, chopped
1 cup lentils, rinsed and drained
2 tablespoons tomato paste
1 teaspoon ground ginger {How to save on bulk spices}
1 tablespoon lime juice
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon ground turmeric
1/4 teaspoon ground black pepper
4 cups vegetable broth
Directions
Place all ingredients in a slow cooker and cook on low for 7 hours or high for 4 hours.

I made this before I went to the park on this beautiful Fall day. I came home to my house smelling fabulous. It is not quite done but had to sneak a taste. This is absolutely delicious. Mavis, you have never failed me on a recipe. Thank you so much for the posts.
You have really inspired me to get a garden going this year and even though there was not a good turnout of summer produce, my cool weather garden is producing great lettuce, swiss chard, and spinach. If I can keep my dog out of my garden because she is chasing the chipmunks, I would have great beets and sugar snap peas. By the way, the granules that keep chipmunks ways won’t work, any suggestions?

I brought the lentils to work today for my vegetarian coworker. She loved it. Tonight I heated a bowl and ate it with some rotisserie chicken, AWESOME! I could eat this every day.
