I can’t remember what day it was but one day last week it hailed like mad. It hailed so much that the next day while Lucy and I were on our daily walk we came across this giant patch of frozen tundra. Seriously, how crazy is that? Snow is pretty much Lucy’s favorite thing {well, besides chewy sticks} and so of course she had to walk around and sample a bit of it.
Food. So. I wasn’t planning on last week being a no spend week but it just sort of happened. Mostly because I got a big wool shipment in and I was busy cutting and dyeing wool all week {and still am!}. That, and there’s the tiny part about me having no desire to leave the house these days. 😉 I do plan to go to Winco later this week though so at some point the fridge and pantry will get stocked again.
I made the best tuna casserole recipe. If you are a lover of tuna casseroles {peas are a must!} you should really try my recipe. It rocks. And it’s great for leftovers the next day too.
I also made a batch of fig and hazelnut biscotti {with out the hazelnuts}. Those were good too. Although I would advise against eating 3 in one day. Freeze the extras if you must, but do make them. My mom found an inexpensive container of dried figs at Trader Joe’s last month and there are just enough figs in there for 2 batches of this biscotti.
Hawaiian chicken. I basically cooked some chicken thighs and poured about a cup of that pineapple finished sauce I brought home from my parents place and poured it over rice.
I also made a batch of our favorite baked macaroni and cheese, 2 soups and tacos with homemade tortillas last week for dinner.
Monkey Boy brought home a pizza one night.
And I also pulled a bunch of onions, carrots, 2 squash and oodles of green tomatoes from the garden yesterday as well.
With 7 days of rain in the forecast and cooler temps on the horizon I decided to go ahead and pull my tomato plants and squash vines. I have a ton of palm sized green tomatoes sitting on the counter and I’m not sure if I’m going to can a batch of green curry sauce with them or try and find a tomato chutney recipe. Maybe you have a really great green tomato recipe you can share with me? 😉
Life. Sometimes it’s a thrill a minute. Other times you just sit at home all week in your own little cocoon and drink copious amounts of tea all day, and play with your dog.
Balance. That’s the key to life.

I pulled my tomatoes yesterday too. I however hung the whole plants upside down in my garage. I’ve done it for years, ever since I saw it on your blog. I love having a huge number of the greenies ripen and it’s much easier to throw the plants away when they’re dry, than slimy and wet.

I didn’t get my tomatoes out before we had a really hard frost/freeze. Unfortunately, all my tomatoes went in the trash. Let us know what you end up making with your green tomatoes, and share recipes accordingly, please! I’d love to have for future reference.

Are you a mincemeat fan? My mom makes a green tomato mincemeat every year with the left over green toms at the end of the year .
My friend grew a heritage tomato varietie that you pick green and over winter and she was having her last one in April ❤️.
I am sure Lucy loved her MB bringing home pizza .

I picked the last plants in my garden about a week ago (beets and carrots). This was the first time I grew carrots and they were so good! We had some yesterday with a roast made in my pressure cooker. It’s so much more satisfying to eat something you have grown yourself!

I have a ton of green tomatoes this year. We made Dilly tomatoes and green tomato pie filling. My husband though the filling tasted like minced pie, but good. The dilled tomatoe slices we’ll use on hamburgers.

I’m just about to try your baked macaroni and cheese recipe, but I just want to verify something. You don’t actually bake it? I only see that you broil the top in the directions. I just want to clarify as it’s called “baked.”

If you are serving it right away then yes, you are really just browning the bread crumbs. Sometimes I’ll make this dish in the morning and then pop it in the oven at dinnertime.

Green tomatoes = pazole soup base at our house. I roast them with onions, jalapenos, poblanos, and olive oil then lightly puree with cilantro, salt and pepper and then freeze. In 15 minutes I have soup on busy week nights by tossing in some hominy and vegetable broth and top with cabbage, chips and avocado!
