How is your day going so far? Pretty good?
I’ve been out in the garden all morning pulling weeds and for the most part staying out of trouble. I snapped a few pictures on my phone today that I thought you might enjoy.
The first picture is of my greenhouse. Later today I plan on pulling up the kale. It’s time to move on to some sort of summer vegetable. After all, we are not dinosaurs and we can only eat so many leafy greens. What do you think I should plant in the black pots in front of the greenhouse?
And beets! Wahooo! I was watering the garden boxes and decided to thin a few for tonight’s dinner. Do you have any suggestions? I’m thinking about making a salad with them, but if you have something better in mind…

Everything but the mice looks nice. I was also planning to pull up our first beets for dinner tonight.( shredded raw as a salad) As for the black pots, eddible flowers would be my suggestion, or ground cherries.

Beet Salad with Goat Cheese is one of my favorite dishes. Yummy!
4 beets
1/3 c chopped walnuts
1/2 c frozen OJ concentrate
14 c balsamic vinegar
3 tbsp maple syrup
10 ounces baby salad greens (or whatever you have on hand)
1/2 c extra virgin olive oil
1 ounces of goat cheese

Beet greens aren’t bad mixed in a salad or cooked like spinach in a pasta dish or quiche. I’d mix it with spinach tho. Not JUST the beet greens in case they’re strong flavored. I also do a beet green pesto. Blanche the greens, blend up with EVOO, garlic, basil, pine or walnuts, maybe some spinach. Yum.
But you can’t go wrong with beet root. So good and good for you!

Two at once? Impressive!! We have that same problem around here…we use a trap named Pablo. 🙂
As for the black pots…something COLORFUL!! Maybe even something perennial…hydrangea, rose, geranium..? Mint might be nice, even if it’s not colorful…it would smell good. On that note..maybe an herb? OH! I know! Dwarf citrus…with herbs growing in the soil below. Then in winter you can pull them into the greenhouse for protection.
