Last weekend was the big neighborhood progressive dinner, and just like the year before, our neighbor Susan hosted the appetizer portion of the feast. Not only does Susan have a knock out {coffee table book worthy} garden, but she is a total superstar when it comes to entertaining.
Both times we’ve been over for appetizers, not only has there been the perfect balance of tidbits, but the food has been fantastic. Luckily for all of us, I was able to get her recipe for her easy peasy guacamole recipe, which we’ve made twice since her party. 😉 Yes, it’s that good!
Good food and good neighbors, what more could you ask for?
Ingredients
2 ripe avocados roughly mashed
1-2 tbsp lime juice – fresh
About 1/4 cup finely chopped red onion
About 1/4 cup chopped cilantro
1 large garlic clove pressed through garlic press
Chopped tomato to taste, juice squeezed out
Salt and pepper to taste
Directions
Combine all. Serve soon or cover tightly and refrigerate up to 3-4 hours.

Good Morning Mavis, I made Orange Marmalade yesterday and only used one packet of the sure gel
in the box. it is too juicy so i realized i should have used the 2 packets in the box,
i wasn’t sure if i should just use 1 or 2 packets?
I read the sure jell box and it looked like i should only use one packet
so that’s what i did. too juicy … sniff sniff, all that work. So today i am putting
all the marmalade back in a pot and adding the second packet of sure gel and
putting it in a new round of sterilized jars and continue following the recipe to completion.
I am not sure it will work or if i should even do this? any suggestions other than start over
and use 2 packets of sure gel? Thank you for all your terrific delicious recipes Mavis.

If so, the recipe calls for {1} 1.75 ounce of box of dry pectin. There is only one dry packet in each box. Did you use dry pectin or liquid? I’ve only ever made this recipe with dry pectin.
