Looking for something easy and cheesy to fill a few bellies on a cool fall evening? The HH made this cheesy ground beef casserole the other night and man oh man did it hit the spot. And the leftovers the next day were just as delicious.
This is one of those meals you could totally make the night before if you’ve got a busy schedule and just pop it in the oven the next night when everyone gets home for dinner.
Quick, easy and filling! That’s my kind of meal. 🙂

Ingredients
12 ounces Bag egg noodles uncooked
1 teaspoon olive oil
1 lb lean ground beef
1 onion finely chopped
2 teaspoons minced garlic
16 ounces marinara sauce {we used Rao’s}
15 ounce can fire roasted diced tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1 1/2- 2 cups shredded cheddar cheese
1 teaspoon butter
Directions
Preheat oven to 375 F. Butter a 9 x 13 casserole dish and set aside.
Cook the egg noodles according to the package directions. While the egg noodles are cooking, add 1 teaspoon of olive oil to a cooking pan and brown the ground beef with the onion until beef is cooked through. Add minced garlic and cook an additional 2 minutes. Add the marinara sauce, fire roasted tomatoes, spices and toss to combine.
Drain the egg noodles and add them to the sauce mixture, covering the noodles with sauce. Pour the mixture into a buttered casserole dish and top with cheddar cheese. Bake for 15 – 20 minutes or until cheese is slightly browned and bubbling.

This looks like a dish my mom used to make but she used macaroni instead of noodles and she called it goulash. It was one of my favorite meals and I still make it every once in a while. We like to have corn muffins with it.

I made this over the weekend. Instead of using Butter to grease the baking dish I used Cooking Spray.
It was delicious.

This looks so good! I am putting this recipe on my monthly menu list. I do have one question. The Fire roasted diced tomatoes. I love roasted veggies. However my elderly mom cannot handle a spicy or hot spicy type ingredient. So are these just fire roasted or other than garlic is there an added “hot” spice? If fire roasted I am adding those to my grocery list. I have not seen them before. Thank you!

The tomatoes are not spicy hot. Here is the ingredient list: Unpeeled Diced Tomatoes, Tomato Juice, Garlic Puree, less than 2% of: Salt, Citric Acid, Dried Garlic, Calcium Chloride.
