You can never go wrong with Ritz cracker chicken. I wish I would have bought more bags of frozen green beans though. I think we only have enough for a few more servings.

The award for the strangest meal combination for the week goes to leftover scalloped potatoes with tuna and toast. 😉
My favorite copy cat Panera tomato soup with toast. I also pulled a container of the HH’s chicken soup from the freezer and had that last week too.
And the turkey pot pie I stashed away in the freezer a few weeks ago made it to the table as well. We had that last night for dinner after successfully getting the dinghy out of the water and up on the trailer and making it home in one piece. {The HH said it wasn’t as hard as he thought it would be}.
And last but not least… We found a new diner! And it was fantastic. I’ll tell you all about it soon.
It was a good week, with lot’s of homecooked meals {and 1 date day}.
My current egg count is 22 {I need to use those eggs!} and the HH is all out of his almond milk. I’m curious to see how long he can hold out before buying more {he LOVES his cereal in the mornings}. I bet he cracks soon.
I am still using Nido powdered milk in my 2 cups of tea each day and I’m down to 2 canisters of whipped cream {for my hot cocoa}.

My husband’s birthday is the day before Thanksgiving this year so that week will have a lot of cooking! I am excited for Thanksgiving side dishes but I need to make a menu and stick to it because we are a small group so we don’t need 10 side dishes and 5 kinds of pie.
I just saw a recipe on the New York Times yesterday that suggested cooking apples in butter when making a pie- I have never done that- has anyone else?
I have been making lots of soups and freezing at least one container of each one so I have things to pull out for quick meals. I’m experimenting with different yeast rolls and breads so soups and salads are a great option to round out a meal when I’ve made a new bread. This week I put chicken tortilla soup and navy bean with ham soup into the freezer.
I just ordered Ghirardelli melting wafers (milk and white) for some Christmas treats I plan to make- I read in lots of places that they are the best of the best. I hope so because you have to order 6 (!) bags of a single variety when you order from the company. My daughter added peppermint hot cocoa to the order and declared it delicious though Starbucks is still her favorite. The order from Ghirardelli arrived really fast and well packaged.
I made homemade macaroni and cheese this weekend using a very old fashioned recipe that had crushed ritz crackers with butter on top- it was excellent and I think the ritz topping made it even better!

Simplicity is good, but if you really like the idea of 5 types of pie, you could try mini versions. That’s what I do. I also finally learned to scale down the side dishes.

Mel- that’s a great idea! I’m picturing individual sized pies. I also got really cute Thanksgiving cupcake liners and fall sprinkles so I want to do some cupcakes so a presentation with individual desserts could be fun.

Yup! I’ve done miniature pies (either personal pan or in muffin tins), cupcakes or mini cupcakes, and once, because I am insane, mini yule logs for Christmas! I’ve also done mini banana puddings since they sell mini nilla wafers. I find bar versions of things also do really well because they are less tedious to prepare than truly mini desserts but you can make a smaller pan and cut smaller pieces. I have an amazing pecan bar recipe I do that way.
I think the best way to think of it is to treat dessert the way you do appetizers where things are 1-2 bites so everyone can sample what they want.

Lots of leftovers here this past week, plus Chinese takeout (a rarity for us) one night (which also resulted in a LOT of leftovers). I made a batch of black bean burgers for dinner tonight, which will be good for several meals, plus some for the freezer. Kale as a side tonight; if we eat another round of the burgers tomorrow, I’ll throw some cubed potatoes in the air fryer as a side (like your breakfast potatoes up there! I love those). I do have a banana I need to use up, though, and I already made cookies with the other two. Hmm…

How do you keep track of what is in your freezer? I seem to lose track of what’s in mine. Are there apps? Paper & pencil?

Yes, I use an app called My Freezer Collection. It lets you set up categories within the freezer, and I use bins on the freezer shelves, so I set up a category for each bin so I know where in the freezer different items are. You can upload pictures, record notes, dates, and cooking instructions, and manage quantities. It works great as long as you update the quantity when you pull something out.
