We were so busy last week {getting the dock and dinghy in, working in the garden, going to a fiber festival} that we didn’t really have time to think about food {or shopping}. It was lovely.
This time of year, everything is focused on working outside and getting projects done that simply can’t be done during the winter months. Places are starting to open up for the summer tourist season and it’s nice to see the shops and restaurants filling up again. Plus, there are all sorts of fun summer festivals and events to check out too.
Although I love winter and hunkering down, summer in Maine is pretty awesome too.
Oatmeal for dinner! Because seriously, who has time to cook?
Chicken soup pulled from the freezer.
And a bowl of split pea soup.
One morning before heading outside I asked the HH to make me some eggs. He made 5!!
Weenies and grilled vegetables on the griddle.
We also enjoyed pickety bits.
And some beans and rice {with a little leftover taco meat}.
And last night I made meatloaf in the Crock Pot.
I almost made it an entire week without buying any groceries, but then The Duck Lady texted and offered me some fennel starts so I ran over there and came home with a bunch of fennel and a half loaf of Focaccia bread from her stand.
Today, even though it’s supposed to get up to 70 degrees, I think I’ll pull a container of bean soup from the freezer so I don’t have to cook anything for linner today and we can enjoy the rest of her bread.
Life is super busy right now with all the gardening projects we have on our list, and I couldn’t be happier {today we are going to remove the bush at the end of our property and get it prepped for fruit trees}.
Summer is finally here. Yee-Haw!
Here’s to a happy and productive monday. 🙂
Peace Out.

Well, I went over budget in May . . . did a little stocking up on flour, rice and pasta. (I keep hearing about a possible wheat shortage . . .) Publix had ground beef on sale so I stocked up on that also.
Bought a Costco rotisserie chicken – the wings and legs were lunch the first day. The next day I made chicken fajitas and that lasted us for 3 days (there are 3 of us). Some of those rotisserie chickens are huge!
The tomatoes, banana peppers and cucumbers are all growing nicely in the garden (actually they are in a greenhouse – we keep the door open during the day so that it doesn’t get too hot inside and close the door at night to keep out the critters). Can’t wait to start harvesting fresh tomatoes! The chickens are doing their job and supplying us (and our friends) with eggs.
All in all, it has been good in the food department. I could complain about the rising food prices but complaining doesn’t seem to have any effect . . . 🙂

Your week of meals with no shopping looks way better than most people’s. Freezer meals for the win!

Five eggs. That cracked me up.

We purchased a whole beef back when Trump was still in office, and still working on it! Have a huge veggie garden going at the moment and we also get fresh eggs from friends as well. I can’t complain too much, but the economy needs desperately to turn around! Sad to say but we have to wait another 2 years for a republican in the oval office!

I’m also glad to see that someone else cooks their meatloaf in a crockpot. It’s the only way to go!
