Dinner that can be ready in 7 minutes! Who wouldn’t love that!? Well, if you’ve got a Trader Joe’s nearby, listen up because this recipe for Trader Joe’s tomato and roasted red pepper soup is the BEST thing I’ve made all year.
This soup was SO good, my husband wouldn’t stop talking about it for 3 days after I made it. Yep. It’s a winner. And I have One Hundred Dollars a Month reader Laura to thank for it.

My current favorite easy and delicious TJ’s go to meal is two cartons of roasted red pepper soup blended with one package of chimichurri rice {in the frozen section}. Cook the rice, add to soup, and voila! Easy and satisfying. Add shredded chicken, shrimp, andouille or other spicy sausage, okars, etc. The possibilities are endless (and delicious)!
Well, I deviated from Laura’s method a wee bit to save time. All I did was toss the chimichurri rice, two cartons of tomato and roasted red pepper soup and a can of Costco canned chicken {drained} into the pot and turned on the heat.
Dinner was on the table in less than 10 minutes. It was glorious!
This Trader Joe’s tomato and roasted red pepper soup was OUTSTANDING! Seriously, if you’ve got a Trader Joe’s nearby, you’ve got to pop by and swoop up the ingredients and make this soup asap.

Trader Joe’s Tomato and Roasted Red Pepper Soup
Ingredients
2 {32 ounce} Cartons Tomato and Roasted Red Pepper Soup
1 bag Trader Joe’s frozen chimichurri rice
1 {12.5 ounce} can Costco canned chicken breast, drained
Instructions
Empty the bag of chimichurri rice, two cartons of tomato and roasted red pepper soup and a can of Costco canned chicken {drained} into a large cooking pot and heat over medium heat until warm.

Can you list the price of the soup and rice? I’m wondering if it would fit my budget. Also, I’ve never had chimichurri, so could anyone give me a flavor profile or similar taste?

Chimichurri is typically made with a lot of fresh herbs (cilantro, parsley, etc).

$10.29 for the Trader Joe’s ingredients. I think a single can of Costco chicken would be about $2.50. So around $12.79 for a big pot {about 8-9 servings}. You could make it without the chicken for less.

Does this include the can of chicken? The soup in Bellevue is $3.49. Not sure how much the rice is. Costco chicken locally is about $2.50-3.00 a can. Love the idea of this soup(which is why I checked the ingredients yesterday). Might try splitting it in half to try first. Have some super cheap canned chicken from couponing days. I think you could jazz up lots of the carton soups. Great idea for a pantry meal!

P.S. I think with so many prepared products and with inflation so crazy lately that people want to have an idea if this is an affordable meal option. Hence all the price questions!

I usually avoid ready to eat foods. Too many unpronounceable ingredients, too much salt, fat, cholesterol, etc. , or too many ingredients my sensitive tummy can’t have. So I checked out your soup recipe. And next time I pass by our Trader Joe’s, gonna have to make a purchase and try this.

I’m so glad you liked this soup – it’s one of my husband’s and my favorites. It appears on our menu a couple of times a month. I love that we get at least two meals out of the recipe, less than $7 for the two of us.
The soup was our demo one day at TJ’s a few months ago. I was always one and done with the samples when I worked there, but I think I showed up at the demo cart 6 or 7 times that day to have some of it! We sold a lot of the soup and chimichurri rice that day!!

Unfortunately, Trader Joe’s will not put stores in our county because the county does not allow alcohol sales in grocery stores. They have been approached repeatedly for an exception to the policy, but they hold firm as alcohol sales are one of their prime money makers.

Ours don’t have alcohol in the same store either, in Minnesota. Technically, as they have separate entrances, just side by side stores really. Maybe communicate that option to your county commission.

I’ve been to many Trader Joes with no alcohol, not even a “seperate” store next door, just none at all. So I am surprised that is stopping them.

The chimichurri frozen rice is now discontinued at TJ’s. Is there anything else that could be substituted? I am going to try fried rice with veggies and add my own sofrito sauce.
