Happy days are here again thanks to the a/c units being installed. No more tacky floors and high humidity in the house due to the weather outside. We can finally turn on the stove again, and I’m pretty happy about that!
Eating hot food in a cool space on a hot day is such a luxury I tell you. A real treat.
This past week we enjoyed a nice big pot of Trader Joe’s tomato and red roasted pepper soup. Everytime we eat this soup the HH comments that it cannot be improved. It’s funny. And true.
I also turned on the oven and heated up a few Trader Joe’s Indian dishes. We got rid of the microwave {did I tell you that?} and you know what, we don’t even really miss it.
Funny how that happens. You adapt. It’s nice to see the counter instead of it being covered with small kitchen appliances.
I keep the mixer {and all my extra baking dishes} in the barn. Thank goodness for the barn. We wouldn’t have bought this place without it.
Nachos! Nachos require more than just cheese, don’t you think? I love loading mine up. Everytime they’re a little different.
Trader Joe’s turkey corn dogs and waffle fries. Blech. We won’t be buying those again.

While the HH was at Costco last week picking up our a/c units, he also grabbed another round of salad mix and blueberries.
I LOVE that Mediterranean crunch salad mix. I could eat it every day. So could the HH. In fact he said he should have bought more. He promised to load up on salad mixes the next time he’s there.
I added peas, beets and dried cranberries to the second bag. 🙂
And last but not least… My new USA Pans arrived. Yee-Haw! They were running a special; spend $50 and get free shipping and a free baking sheet and Silpat.
It seems like they are always having some sort of deal. So if you don’t see one, wait. It will happen.
I LOVE this brand of baking pans. They are super easy to clean, but nothing sticks to them… Which is pretty awesome if you ask me.
Fall is right around the corner and baking season is here again and you know what? I’m looking forward to settling in and getting back to baking again. Bring on the comfort foods!

I love those USA pans! I have the muffin pan, two of the square cake pans and the large rectangle. I think I’ll get a bundt pan next.

While respecting your privacy, I’d be interested in some details about the style and age of your new home. What criteria did you use to select it?
We haven’t had a microwave in decades. When I’m at work (where there’s a microwave) and hear up my lunch I’m still amazed at how quick and easy it is, but you just get used to it at home. Definitely not worth the counter space (although when it’s hot and muggy, it would be a nice way to cook – I’m in MA).

I love the USA pans. I purchased a few of them after you had previously recommended their products. I personally like the quarter sheet pan since there are only two of us at home now. Is there any difference in the products ordering directly from USA Pan or ordering from Amazon?

Same products as the ones on Amazon only difference is on the USA PAN website they offer better deals/freebie pans rather often.

My big food success lately is that I started keeping a ton of food at work so that I don’t have to pack lunch each day and also have breakfast stuff available in case I run late in the morning and have to skip it. It’s so much easier, and I’m also eating so much better.

Our microwave is the plate warmer. Wouldn’t be without it in the winter. Hubby and I grew up in Florida without A/C. Hot times.

We just returned from a trip to New England last week. It’s been hot in Florida, then we had a weekend of rain from a tropical storm that was a near miss. So it was cool Saturday and Sunday and still today. Since coming back we’ve been trying to eat in more since we spent a lot on the trip. Hot dogs and beans, baked chicken at home. Popping open a can of green beans for a side, I even made a side of white rice the other night. Cooking at home is one of those pleasures you realize more after traveling for an extended period of time.

I bought the USA covered 9×13 and I don’t recommend it. The pan itself is great, but the cover has holes around the handle so it’s not airtight. I don’t trust the latches either to be secure enough to carry it by the handle.

Three cheers for getting rid of the microwave. I did that 2 years ago when I renovated my kitchen. It was an over-the-range, 25 year old plate warmer and the worse part was the filters were extremely challenging to change, ditto with the light bulbs, AND you couldn’t get a large pot on the back of the stove. So out it went and a new range hood took it’s place. The stove was replaced with a 2-oven one and the smaller top oven takes just 5 minutes to re-heat food. I love it. Congrats on the a/c. It should be a requirement in a humid seashore environment. Bye, bye damp, tacky floors, counters, and mildew on the back of every piece of wooden furniture and cabinets.
