Big salads, that’s all I seem to be eating lately. They’re just so easy, it’s hard to take the time to make anything else these days.
I mean, you can pretty much add anything to them and if you add in a little bread and cheese you’ve probably hit all the food groups, right?
I don’t think I’ll ever tire of them. Even when I have more time to spend in the kitchen once the giant wool project I’m working on is done.
A banana for breakfast and a big salad in the middle of the day and tea and cookies in the afternoon… What else do you need, right?
This past week I prepared the Mediterranean Crunch salad and tabbouleh salad from Costco multiple times. I even made a tuna salad {with all the extra bits}.
Another simple thing we had last week… Baked potatoes. Man those are good!
When I ran out of salad and potatoes I tossed a frozen pizza in the oven. {They aren’t what they used to be but they work in a pinch}.
The meal I probably spent the most time on last week was warming up a carton of Trader Joe’s tomato soup and making a grilled cheese sandwich.
That combo, it never gets old.
The HH whipped up some Kung Pao Chicken {from Trader Joe’s}. At $5.99 a bag it’s way less expensive than going out to eat, that’s for sure.
And of course there were pickety bits too. I don’t think a week has gone by in the last 5 years where we haven’t had pickety bits at least one night a week.
It’s just too darn easy.
My teatime treat this past week was chocolate chip cookies with a little sea salt sprinkled on top. Well those, and Valentine’s chocolates from Wright’s Chocolate House.
Sweet treats, they’re pretty much my favorite thing to eat. But I think you already knew that. 😉

I finally purchased a baking steel and peel, so I’ve been experimenting with pizza and pita bread. Even with a few flops (literally!), it was a really yummy week!

The best thing I ate while on vacation in Puerto Vallarta was a beet gazpacho. I replicated it this past week using beets I’d frozen last summer. Delicious. Another new recipe – egg roll in a bowl. The recipes are online. Recipes are merely a suggestion in this household. I’ve adopted your term “pickety bits”. The charcuterie board makes a good late day meal or any time, for that matter.

Looks healthy to me! How do you avoid eating dinner to manage your calories? Doesn’t the HH have dinner? I have the same issue but it is so hard skipping dinner.

Just spent 10 days in Hawaii so had a lot of fresh fruit, salads, and fish. Also drank a lot of pog juice, my new favorite, It is made with passion fruit, oranges, and guavas. I plan on making some this week as I have a lot of frozen passion fruit and guavas from our trees, and lots of oranges ready to pick. It has been hard to get back to reality and not just want to sit and relax all day!
