Last year I grew almost 120 pounds of carrots. That’s A LOT of carrots. I could only give away so many carrots before my neighbors started locking their doors when I came a knockin’. So I came up with a bunch of delicious recipes to use my carrots in. Here they are in one convenient spot:

Such beautiful carrots!! I’m curious if you’ve ever used the tops? Lots of recipes online for carrot top pesto. Never tried it myself, but seems it might be something you’d be into.

We like honey dill carrots at our house – slice the carrots, saute them in butter until soft, then drizzle with honey, sprinkle liberally with dried dill weed and a pinch of salt, and cook for about five minutes longer. So good!

I’m in Georgia….totally opposite end of the states from you! But I have a great uncle that lives in Tacoma and he has said that our weather is not a lot different from yours. Which is hard to believe since we are on opposite coasts and we are south and Washington is north.

Pickled carrots! Use your carrots and peppers in one fell swoop! And they are so pretty in the jar….make great gifts and everyone loves them!
