My friend Lola is a health nut—like seriously, you can’t give her an opening or she’ll spout off all sorts of nutrition facts that will make you feel bad about your next cupcake. I have to admit, though, every once in awhile, her recipes surprise me. She made this super yummy “granola” for the car ride. It doesn’t have an ounce of grains {she’s eats paleo-style}, but it still taste granola-y. And you know what? You almost feel a little healthier eating it.
Ingredients
1 1/2 cups sliced almonds*
1 cup pumpkin seeds
1/4 cup sunflower seeds
1 cup chopped walnuts or pecans*
1 tbsp. cinnamon
1 tsp. vanilla
2 tbsp. melted coconut oil {Buy it online}
1/4 cup pure maple syrup {Amazon has a great selection}
Directions
Mix all of the ingredients together in a large bowl. Cut a piece of parchment paper to fit your food dehydrator and spread the mixture out onto the trays. Dehydrate for 10-12 hours. Move the granola to a container, leaving the lid off. It will get crunchier upon standing.
*Lola says if you want to make the nuts easier to digest, soak them all in water overnight before making the granola. {I told you, she’s kinda nutty. No pun intended. Ha!}

200 degrees, stir every 15 minutes for an hour, hour and a half.

I make a similar mix, but use a little honey and a little coconut sugar. When it’s cool, I stir in some dried cranberries. Mmmmm! Might be time to make a batch today!

Does Lola suggest soaking the nuts and seeds or just the nuts for easier digestion? Are these roasted and salted nuts? Is Lola into “raw foods,” or was the soaking and dehydrating (no temperature given) simply informational and an easy prep method? Can you tell I read a lot about healthy eating ideas?
The results look delicious and remind me of a crumbled Kind bar, especially if one adds fruits when cooled or near the end. Soaked nuts probably would take longer to dehydrate, right?
