The other night I whipped up some vegan friendly black bean fajitas for dinner and man oh man were they delicious. Umm and easy too! 😉 I almost feel guilty posting this recipe it’s so simple.
Ingredients
1 {16 oz} can black beans rinsed and drained
1 sweet pepper sliced
1 onion, sliced
1 zucchini, sliced
1/2 bunch cilantro, chopped
1/2 teaspoon cumin
1/2 teaspoon chili powder {See how I save on Bulk Spices}
1 garlic clove, minced
2 tablespoons canola oil
1/2 teaspoon Kosher salt
1/4 teaspoon pepper
1 dozen tortillas
Directions
Heat a medium sized skillet with vegetable oil and sauté veggies until almost done. Add all the spices and sauté for few minutes more. Remove from heat and add a little chopped cilantro. Serve with tortillas or over a bed of rice.

They may be easy, but I have not thought of putting black beans OR zucchini in a fajita. I lke the idea and I’m going to try these this week. I’m betting this would freeze well, too (minus the tortillas).

Mavis, I made these for a potluck and they were DELICIOUS! I have made numerous excuses for not cooking for myself but this recipe will be a go to for me from now on. I chopped the veggies and had them done in less than 30 minutes. No more excuses which allowed for fast food (or what my friend calls fat food). This is budget friendly, extremely healthy, and FAST! Just finishing tasting these. they came together easily (i had summer squash on hand so i subbed it in for zucchini). tasted delicious and could be easily changed for anything you have on hand. next time i’ll pick up some sour supreme to throw on top. Thanks!

I’m a daily reader, de-lurking to comment 🙂 I’ve made your veggie-fajitas several times over the last few years, and they always turn out delicious (thanks)! This most recent time, I added chicken for the sake of my husband- you know, to make it more of a “manly” meal. Otherwise, I might get the puzzled “where’s the meat?” look. Anyway, they’re so yummy either way.
On a related note, my garden has been producing plenty of zucchini lately, so I’ve been trying to creatively hide it in dinner each night without my husband or kids catching on. None of them love it. And you know, the local animals have been attacking many of my veggie crops this summer, but haven’t touched the zucchini! My hubby just laughs and says, “well, they don’t seem to care for those zucchini either.” _sigh_

I’ve made this recipe several times, and I always love it! (I leave out the cilantro, as I’m not a fan.) Yum!!
