I’ve never loved Popsicles as much as I love ice cream… until this recipe. The ginger gives it such a different flavor that I couldn’t stop eating these. Don’t be afraid of the ginger, or if you’re really nervous about it, you can add a little less than the recipe calls for. Either way, I think you’ll really like them. If not, give me a call and I’ll come eat the rest! 🙂
2 oz ginger root, peeled and cut into chunks
1/3 cup sugar
1/2 cup water
2 peaches, pitted and cut into chunks
Combine 1st three ingredients in a saucepan over medium heat. Bring to a slow boil and then reduce heat to low. Simmer for 10 minutes, stirring occasionally. While syrup is simmering, place peaches in blender or food processor and puree until smooth. Leave in blender. Remove syrup mixture from heat and cool completely. Strain syrup through a sieve into the blender. Throw ginger away. Blend until smooth. Pour mixture into Popsicle molds and freeze for 4 hours or until solid.

Oh YUM! How smart with the ginger!!! I have made them with a pinch of cinnamon, sugar and a bit of water too added to the pureed peaches, but not ginger! This is already added to my TO MAKE list for the weekend! Thanks…that is Peachy Keen! 🙂
