Not only had I never made an Asian chicken wrap before, I’d never even eaten one before. Why on earth not? Well that’s the question of the day after I bit into this one and realized what I’d been missing out on my whole life. The wrap itself is awesome, but the cilantro honey dressing puts it over the top. It’s freakin awesome.
Ingredients
For wrap:
3 cups shredded cooked chicken breasts {I use Zaycon chicken}
4 green onions, finely chopped
1 cup finely shredded cabbage
1 cup fresh cilantro leaves, chopped
1/2 cup shredded carrot
6 8-inch tortillas
For dressing:
3 tablespoons seasoned rice vinegar
3 tablespoons sesame oil
2 tablespoons honey
1 tablespoon water
1 garlic clove, minced
3/4 teaspoon minced fresh gingerroot
1/4 teaspoon pepper
Directions
Combine chicken, green onions, cilantro, cabbage and carrots, and set aside. In a small food processor or blender, combine the vinegar, oil, honey, water, garlic, pepper, ginger and toss with the chicken mixture.
Spread tortilla out on flat surface and spread mixture evenly on each tortilla a. Roll up tightly. Cut each wrap diagonally in half to serve.
