My whole family loves lasagna. My whole family loves soup. I love cooking in a crockpot. Combine all those things and you have the most amazing soup recipe on the planet.
This recipe is so perfect for those crisp fall days when you’re running around like crazy shuttling everyone to fall sports and activities. Or it’s perfect too if you’re just sitting around watching TV all day. It’s a super versatile soup. And super yummy!
PrintCrockpot Lasagna Soup
Ingredients
1 {28 oz} can of diced tomatoes
1 6oz can of tomato paste
1 lb ground beef
3 cups of beef broth
3 cloves of garlic, minced
1 tablespoon dried parsley
1 tablespoon dried basil
1/2 cup chopped onion
1 cup V8 Juice
1/4 tsp pepper
1/4 tsp salt
2 cups uncooked shell pasta
1 cup of water
Instructions
In a large slow cooker, combine tomatoes and tomato paste. Then add all ingredients except the water and the pasta. Cover and cook on low for 7-8 hours or on HIGH for 4-5 hours.
30 minutes before soup is done, add the water and noodles. Stir to combine. Cover and continue cooking until pasta is tender, about more 30 minutes.

Do you cook the ground beef before you put it in, or does it cook in the crockpot? Thanks1

I have done it both ways actually. Some people do not like to cook raw meat in the crock pot but unless I have leftover taco meat, I will typically toss in a pound of uncooked hamburger in there, crumble it up a bit, stir and then put the lid on and let it cook. I hope that helps.

This recipe is the latest induction into my ‘soup recipe hall of fame’. It is a delicious lite version of lasagne, that freezes well in individual portions. I tailored the recipe to my taste with the following modifications:
1. Substituted Italian sausage for the ground beef
2. Substituted a can of crushed/pureed tomatoes because I don’t like tomato chunks
3. Dropped 2 T. of a cheese mixture to the heated bowl of soup (mixture is 2 c. cottage/ricotta cheese, 1 c. shredded mozzarella, and 1/4 c. parmesan)

You can sub regular tomato juice for V-8.

I wouldn’t add it to the pot while it’s cooking but topped with cheese as you serve it would be delicious!!

It’s just Chef Boyardee! I made this and it’s just an 8 hour method to make Chef Boyardee! I’m not thrilled.

Actually really impressed by this recipe! I used Italian sausage instead and pre cooked noodles and meat! Also added a dollop of ricotta cheese in each bowl. It was delicious!
