Looking for another cookie recipe to add to your holiday collection? Well this ameretti cookies recipe I made last week turned out so good, I plan on making them every December from here on out.
These ameretti cookies are made with almond flour, but it you don’t have almond flour on hand no worries, just toss some blanched almonds {I used slivered almonds} into a food processor or blender and pulse until the almonds resemble a nice coarse almond flour {1 cup of almonds typically yield 1 1/4 cups of almond flour}. It’s that easy.
So if you LOVE almonds, this ameretti cookies recipe is for you! And hey, they’re gluten free too.

Ingredients
3 cups almond flour
2/3 cup granulated sugar
2 tablespoons confectioner’s sugar
1/4 teaspoon sea salt
2 large egg whites
1 teaspoon almond extract
1/2 cup confectioner’s sugar
Instructions
In large mixing bowl, stir together the almond flour, granulated sugar, 2 tablespoons confectioners sugar. Add the egg whites and almond extract and mix just until the dough comes together {I used my stand mixer for this}.
Cover and chill the dough in the refrigerator for 1 hour.
Preheat oven to 325°F.
Line a baking sheets with parchment paper.
Place 1/2 cup powdered sugar on a plate
Using a 2 tablespoon cookie scoop, form the dough into balls and then roll the dough balls in the powdered sugar to coat. Place the dough balls onto the prepared baking sheets and gently press down on each ball to flatten slightly.
Bake cookies for 25-30 minutes or until the cookies are a nice golden color and cracking beneath the powered sugar. Cool cookies on baking sheet for 5 -10 minutes, then move to a wire rack and allow to cool completely. Store in an airtight container or zip baggie.

You can buy almond paste at Italian bakery. Much easier
