A little over a week’s worth of meals for 2 for $56.23? Yep, I’d say that’s another win in the Trader Joe’s column.
Life. It gets really busy sometimes, and it’s nice to know that you can pop in and out of a small store with a vague idea of what you want to eat/prepare for the week and be out in 10 minutes with everything you need.
That’s our life right now. And this way of shopping seems to be working for us, so I’m embracing it.
Meals were simple this week. We made quesadillas twice, and both times they were delicious.
A little salsa, a little avocado and a spoonful of sour cream. What more do you need?
There was avacodo toast.
And toast with Trader Joe’s lentil bruschetta that we made for the first time.
The extra lentil bruschetta was tossed over salad greens the next day with a little cucumber and tomato. It was excellent! Fiberlicious and full of protein.
I also whipped up a batch of Trader Joe’s tomato and red roasted pepper soup. Another winner!
And the HH made a pot of his delicious homemade chicken soup with some leftover rotisserie chicken that had been hanging out in the freezer.
It was a good week! Simple, magical meals that left us satisfied. What more could I ask for?

I am trying to work through our huge freezer because we have a trip planned this summer and do not know if it will turn into several weeks or more. I don’t want the power to go out and loose things or let things age any longer in there. It is kind of a silly thing, but it is also forcing us to eat those things we forget about or were saving for whatever like cranberries. A lot of the stuff (mostly meats, processed foods, and sauces) my hubby cannot eat, so it will help us with the lifestyle change we had to make last year to make it more permanent. Those were all purchased and frozen before his illness, so they need to be used up. I also want to do a deep clean of the pantry and put those items he cannot eat aside and use those up before they get any older or toss them.

We’re in the same boat with clearing out the fridge and freezer but for different reasons. Our home insurance went up by almost 4k and made our monthly payment significantly higher. I was able to get new lower insurance but have taken a month off from doing major grocery shopping to offset the price. Now back to the regularly scheduled payment. Phew!!! It was a good refresher to eat at home, eat less, meal plan, and use up what we have.

I finished planting my garden today. Now we wait . . . ha ha.
I will be eating the last of my eggplant parmigiana today – still have some lasagna, chicken pot pie and meatloaf left. Pretty soon I will need to do another meal prep day. Now that the planting is done, I just might have enough energy to do that. 🙂
