Spoiler alert: This is a semi-homemade recipe. 🙂
Last week while we were in the middle of a soupfest at our house, I was looking for something other than bread/toast to serve with our soup and on a whim, I whipped up a batch of bacon cheddar jalapeno biscuits using a box of Fisher scone mix as the base.
Fisher Scone mix is a PNW brand and so finding boxes of the best scone mix on the planet earth is pretty much impossible here unless you shop online. Luckily though my old neighbor Mrs. HB knows how much I LOVE Fisher scone mix, and so thanks to her shipments of the scone mix to me every Christmas since we’ve been in New England, I always have a ready supply on hand for whenever the craving strikes.
Besides making scones on a regular basis with the mix, another one of the things I like to do is make biscuits with a bunch of add-ins with it.
When it comes to biscuit add-ins, the options are pretty limitless. But this bacon cheddar and jalapeno version is one of our favorites.

Don’t have a box of Fisher scone mix on hand? Make your own from scratch and add in your own blend of deliciousness.

Ingredients
{1} 18 ounce bag Fisher Scone Mix
4 slices cooked bacon, chopped
1/2 cup shredded Monterey Jack cheese
1/2 cup cheddar cheese
1/4 cup pickled jalapenos, chopped
1/2 teaspoon freshly ground black pepper
1 cup water
Instructions
Preheat the oven to 425 degrees.
In a large bowl, mix all the ingredients together. Using a 3 tablespoon cookie scoop, scoop biscuit batter onto a lined baking sheet evenly apart and bake at 425 degrees for 12-14 minutes or until done.
Serve warm. Delicious with a pat of butter between a sliced biscuit.
The recipe makes 12 biscuits.

Fisher scones in the Pacific Northwest fairs are must for me. There served warm with butter and jam in a little white bag. Wow delicious

King Arthur has some great scone mixes. You can buy them online or visit their store in Vermont. They have a deli type counter service there with amazing food.
