When my husband talked to his brother on Christmas day and asked how everything was going and what he was up to, my brother in-law mentioned that he was in charge of the appetizers and that he was making bacon wrapped tater tots for his guests.
My husband thought he was joking.
Because seriously… bacon wrapped tater tots? Who would make such a thing?
Well, not only was my brother in-law serious, but unbeknownst to us, it’s actually a thing. Like as in people really make bacon wrapped tater tots and serve them to other people… and they enjoy them.
Yada yada yada… yesterday afternoon the HH made a batch.
And we were VERY skeptical.
How in the world could this possibly turn out good?
Well HOLY COW MAN… we were wrong. So wrong in fact that we gobbled down the first batch so quickly {with barely any words between us} that my husband immediately made a second round of the bacon wrapped tater tots.
And while we were waiting for them to come out of the oven, we were like… These taste like little bite sized baked potatoes with all the toppings… Wait. We need sour cream!
And so we tried them with sour cream. And Whoa Nelly they were even better than the plain ones. I think the only thing else we could have added were a few chives sprinkled here and there {but we didn’t have any}.
Bacon wrapped tater tots! Who knew?
Seriously, you need to try these!!! They’re crazy good.
This recipe is a keeper, that’s for sure.

PrintCandied Bacon Wrapped Tater Tots
Ingredients
3 cups tater tots, thawed
6 slices thin bacon, cut into 1/3rds
2 thick slices of cheddar cheese cut into 1/4 inch cubes
1/3 cup brown sugar
sour cream and chives optional
Instructions
Preheat oven to 400 degrees.
Line a baking sheet with parchment paper and set aside.
Lay a piece of bacon flat on a cutting board. Lay a tater tot and a piece of cheese on top of the bacon and roll so the seams of the bacon overlap the tater tot and cheese.
Carefully roll the wrapped tot in brown sugar making sure to coat.
Place tater tots seam side down on a baking sheet and bake for 12 minutes. With tongs, turn the tots over and bake an additional 12 minutes or until the bacon is nice and crispy.
Serve warm as is or with a side of sour cream and chives.

We make bacon wrapped little smokies drizzled with brown sugar. They are to die for and we call them heart attack on a stick. Yummy! Everything is better with bacon, right?

We make these too! They are delicious. I want to try bacon wrapped dates. I hear they are yummy too! Everything IS better with bacon.

I also like to make bacon wrapped dates. But to take it to the next level I roast a head of garlic then slice the dates open and place a clove or two in the opening and then proceed to the final instructions. Tastes amazing! A little tip: I sprinkle the the slices of bacon with the brown sugar before rolling them up and secure them with a toothpick. Perfect way to serve as an appetizer.

We make these too but we call them “pig wrapped pig” . Hahaha. Yum! I have done the bacon wrapped goat cheese stuffed dates. Those were a little more labor intensive. But so yum.
