Ingredients
1 cup whole wheat bread crumbs
3 large beefsteak tomatoes
2 tablespoons fresh basil, chopped
2 teaspoons Italian seasoning
1 tablespoons unsalted butter
1 cup pine nuts, toasted
Instructions
Preheat oven to 425°F.
Butter a 9-inch casserole dish
Toast the pine nuts and set aside.
Combine the bread crumbs with 1 tablespoon melted butter and 1 teaspoon Italian seasoning and toast until lightly browned.
Slice tomatoes about a 1/2 inch thick and arrange, overlapping, in baking dish.
Sprinkle remaining 1 teaspoon of Italian seasoning, basil, pine nuts and bread crumbs over the top of the tomatoes and bake uncovered for 15 minutes.
Serve warm. Preferably with a big bowl of pasta.
