I love sweet broccoli salads. I also love bacon. Combining the two was a wise decision on my part.
It’s the perfect blend of sweet and savory; healthy and splurge. And then the cashews are added and it pretty much takes this simple broccoli salad over the top. If you need a quick lunch, make this.
If you need a side item to bring to a potluck, make this. If you want an easy side dish to whip up with dinner, make this. Get the hint? You should make this.

Just asking: like really (?) one pound of bacon and two pounds of broccoli??? Sound like a lot of bacon. Don’t get ne wrong. I love bacon, but that much?
Mavis Butterfield says
Yep. It’s delicious! I suppose you could always cut back on the bacon if you want.
Pam says
And a lot of the bacon will cook off because it’s fat. I’d wager half of that 1 pound will actually be meat.

Now that is what I am talking about. Yum. Thanks Mavis.

Do you cook or blanch the broccoli at all? It sounds delish.
Mavis Butterfield says
Nope. 🙂 And it tastes wonderful!!

This recipe is also good with added chopped apples or pears.
Mavis Butterfield says
Great idea, thanks Christine. I think I’ll add some chopped apples next time.

Yum! I have a similar recipe. Instead of cranberries, I add 4 cups of red seedless grapes.

one of my VERY FAV salads ever!
Elaine McCarty says
I make this salad and its a favorite with my family. I have never tried cashews in it though, and that sounds delish – so does adding apples. I think I’ll have to make some right away!

Could I decrease the amount of sugar for a less sweet taste?
