If you’re looking for a quick and easy snack to set out for your guests this holiday season, or even if you’ve been searching for a simple hostess gift to pass out to friends and neighbors, this recipe for candied cashews should do the trick.
Let me warn you though, if you make these while your family is in the house, you might not have any left to set out for guests or to give as gifts.
Trust me, I know. My husband ran off with the first batch I made. 😉

Ingredients
2 cups whole cashews
1 large egg white
1 tsp water
⅓ cup granulated sugar
3 tablespoons brown sugar
1 ½ teaspoons cinnamon
⅛ teaspoon nutmeg
Instructions
Preheat the oven to 300F.
In a small bowl add the sugars, cinnamon and nutmeg. Stir together and set aside.
Place cashews in a medium sized bowl.
In a mixing bowl, beat the egg white until frothy. Add water and whisk together for another minute.
Pour the egg white mixture over the cashews and stir until the cashews are coated.
Add the sugar mixture and stir again until the cashews are fully coated.
Spread the coated cashews in a single layer on a lined cookie sheet and roast, stirring occasionally, for about 25 – 28 minutes.
Cool the pan on a wire rack completely before serving.

I love candied nuts, especially on a pear, Gorgonzola, and bacon salad this time of year. I always candy my own nuts as I am particular about how I like them.
If you have a lazy pajama and slow snow day, read up on the cashew industry and the harvesting and some of the toxic things about it. I heard it on NPR a few years ago and went down a squirrel hole about it afterwards online. I don’t buy any cashews anymore. They use to be a diet staple for me and were used in many vegan recipes too as the mainstay nut.
