Casserole season, or rather comfort food season has begun here at Camp Butterfield, and I couldn’t be happier.
With the gloomy, cold skies outside, it’s nice to have easy to prepare one dish meals around here. And as an added bonus, I get to spend more time baking rather than worrying about linner because the casseroles last several meals. 🙂
It’s a win-win if you ask me.
Last week I made a chicken bruschetta bake for the first time.
And a tuna casserole {with peas!} for the millionth time.
I also made a batch of Mel’s drunken beans with extra garlic and jalapenos. The HH LOVED it!
And there was also some fettuccine alfredo from Trader Joe’s as well.
Dear Santa, if you are reading this… All I want for Christmas is a gift card to Trader Joe’s so I can stock up on freezer meals and desserts and take a month or two off from cooking and stay in my pajamas and hook rugs this winter.
I also made the most glorious batch of stollen. It was so good, the HH didn’t want me to give away one of the extra loaves. 😉 I’ll share the recipe tomorrow because you have to make it!!
And we also found a new restaurant that was so crazy good, we’re already planning on going back again.
It was a good week! Casserole season is in full swing and we enjoyed lots of easy meals that lasted for days. I love when that happens.
Well, I’m off to make cookie dough so I can pop the cookie balls in the freezer for later. I think I’ll make the classics; chocolate chip, oatmeal raisin and peanut butter.

I don’t love Costco, too big and chaotic. However my husband loooves going there and always asks if I want to go like it’s an exciting field trip!

I feel that way about Trader Joes but because it is so crazy small and crowded. I feel like screaming in that store. The parking is even worse. It has been years since we have even gone near that store. I just don’t understand the hype.

Oh it’s too bad that’s your experience with trader Joe’s. Ours is in a convenient location. It still doesn’t have a lot of parking space, but it’s enough. We love to shop there, though we tried to go earlier in the day rather than later.

I feel the same! “Can we take out the people so I can see what’s actually in here, please?” And while the staff are always friendly, the other shoppers….not so much. I do enjoy everything we get from there, but it’s just becoming less and less worth the hassle for me.

Yes, casseroles for the win!! I have chicken pot pies, turkey pot pies, chicken fajitas and stuffed pepper filling in the freezer just waiting for their chance to get eaten. Those are the ones that I made, but there are also frozen dinners that I bought ready-made. That’s how I save my energy for more important things . . . like making cookies! Tomorrow I will finish up with the baking and then . . . maybe . . . get back to doing the regular chores . . . ha ha ha

We don’t use the word ‘Casserole’ in our house. It seriously brings back terrible memories, refusal to eat, and anger out in my hubby. It is a hypocritical joke because I will make something that is technically a casserole, but I just put it in a skillet, small ramekin, or on a sheet pan and call it something else random like a hash, skillet, or sheet pan roast and he eats it just fine. When the hubby travels we enjoy tuna noodle casserole, Shepard pie, chicken divan casserole, enchilada casserole, etc. The kids are old enough to know about the whole casserole tantrums, so they poke fun at my unconventional casseroles and create a lot of dialogue as to why it is or is not a casserole. Restaurants don’t write casserole on their menu either, they just give it a fancy name and I do the same and never use a jelly roll dish and leave a purposeful missed ingredient on the side like the noodles or cheese so it doesn’t feel like a casserole.

I’ve learned to use the word “bake” instead of casserole! Or “gratin” if it has some breadcrumbs on it.

That is funny about not using ‘casserole’ when referring to food. I have to careful about what I call things for Tommy, too. Those are great looking dishes.

In our neck of the woods a casserole is called a hot dish. I love me some good hot dishes. Since my husband passed away even a half of a hot dish seems to last forever.
